The Freshman Cook: Luv U! Marshmallows!

Our Valentine post today is homemade marshmallows! Homemade marshmallows that are heart shaped, pink, cherry flavored, and have sprinkles! The total Valentine package!

Luv U ! MARSHMALLOWS

Ingredients:

2 teaspoon Butter

3 envelopes unflavored Gelatin

1 cup Cold Water, divided

2 cups Sugar

1 cup Light Corn Syrup

1/8 teaspoon Salt

1 teaspoon Cherry Flavoring

Pink Coloring

Line a 13″ X 9″ pan with foil, and grease with butter.

In a large metal bowl,sprinkle gelatin over 1/2 cup water

and set aside. Make sure the bowl is one you can 

use a mixer with.

In a large heavy saucepan, combine the sugar,corn syrup, 

salt, and remaining water. Bring the water to a boil.

Cook until a candy thermometer reaches 240 degrees.

Remove from heat and carefully add to the gelatin.

Beat on high until mix is thick and doubles in volume.

This should take about 15 minutes.

Add your vanilla.

Add your coloring.

Spread into prepared pan.

Spread as evenly as possible.

Cover with plastic and let it sit at room temp for 

6 hours or overnight.

Sprinkle a piece of parchment paper with confectioners 

sugar. Take the marshmallow out and out it on top

of the sugar. Lightly sprinkle the top of the 

marshmallow with sugar.

Using a small heart shaped cookie cutter, that is coated

with pan spray, start cutting out hearts,

and then roll the sides in sprinkles.

Place on a rack to dry a little.
