French Toast Biscuits / #FoodieExtravaganza

Today is Foodie Extravaganza day, and we are showcasing buttermilk biscuits today. I made these French Toast Biscuits after my husband told me about a television show he saw where the chef at a cafe made french toast using cake instead of bread. He said it looked incredible and all the customers raved about the taste, so I thought it would be a great idea to see if biscuits would look and taste just as amazing. I was surprised at how great they were. There was a little trial and error because the biscuits don't soak up the egg mix as quickly as bread, but after a little adjustment from the traditional method of french toast preparation, they were awesome! They tasted a little less sweet, they were full of flavor and looked incredible! I hope you think so too!

French Toast Biscuits

 printable recipe
4 eggs
1/2 cup Heavy Whipping Cream
1 teaspoon Cinnamon
1 teaspoon Vanilla
16.3 ounce package Buttermilk Biscuits
Confectioner's Sugar
1 teaspoon Vanilla

Cook biscuits according to package directions. Let cool.
In a large bowl mix together the eggs, heavy whipping cream, cinnamon, and vanilla. I found an immersion blender or a small mixer works great to mix this thoroughly. Slice a cooked biscuit in half, lengthwise. Place a half piece in the egg mix and immerse. The biscuits won't sink like bread, so they have to be helped a little. The cut side will soak up the egg mix.
Poke a couple holes in the top half of the biscuit. It will need a few spoonfuls of egg mix poured on top of it for it to soak in.
Melt butter in frying pan, and place biscuits in pan. Fry until golden brown on both sides. The best way is to fry one side until the egg has set up, then flip over and fry the other side. 
Sprinkle with confectioner's sugar, a side of syrup, and some fresh fruit. Enjoy!
