Holiday Breakfast Casserole / #SundaySupper


Casseroles are a great dish for your busy holiday mornings because of their make ahead convenience, and their ability to feed many people at one time. This Holiday Breakfast Casserole does those things and it uses packaged breakfast rolls for even greater ease in preparation.

Holiday Breakfast Casserole
 (feeds approx. 6-8)

1-8oz. package Orange Rolls
1/2 cup Orange flavored Cranberries
1/4 cup Chopped Pecans
1 teaspoon Cinnamon
1/8 teaspoon Salt
2 cups Milk
2 tablespoons Butter
1 Egg, beaten
2 teaspoon Orange Extract
1 tablespoon Dark Brown Sugar
1/3 cup Confectioners Sugar
1-2 tablespoons No Pulp Orange Juice
1/4 teaspoon Orange Extract (if desired)



Preheat oven to 350 degrees.
Cook the orange rolls according to the package directions. Once the rolls come out of the oven, add the orange frosting as directed. Set aside to cool.
 Once cooled, cut rolls into small cubes. Place in 9x13 baking pan. 
In a medium bowl mix together the cranberries, chopped pecans, cinnamon and salt. Use a large spoon to mix all the dry ingredients together with the rolls. Heat the milk and butter in a medium saucepan until warm. Add beaten egg, sugar and extract to the milk and butter.  Mix together. Pour into baking dish over the dry ingredients.
Bake for 30-40 minutes. Make glaze by mixing together the confectioners sugar, orange juice, and if you want even more orange flavor, add the orange extract. If you are happy with the intensity of the orange flavor, omit the extract.  Set aside. Check to see if the casserole is done, by checking the middle with a toothpick. 
 Remove from oven and drizzle with Orange Glaze.

Chocolate Mini Waffles / #Choctoberfest

Chocolate Mini Waffles are really more dessert than breakfast, and they are so tasty and fun! They are easy and quick to make, and they are perfect for holiday parties, caterings, kids parties, and celebrating special days! They are easy to customize to various themes, and honestly, I've never met someone who didn't love waffles!             


Chocolate Mini Waffles

1 1/2 cups Flour
1/4 cup Cocoa Powder
1/2 cup Imperial Sugar
1 tablespoon Baking Powder
1/4 teaspoon Salt
2 eggs
1 3/4 cups Milk
1/2 cup Cooking Oil
Whipped Cream
Sprinkles

 Add the Flour, Cocoa Powder, Sugar, Baking Powder and Salt to a large mixing bowl. Make a well in the center of the mix. In another medium size mixing bowl, beat the eggs slightly. Add the milk and the oil to the eggs . Add wet mixture to the dry mixture. Stir just until moistened. It will be a bit lumpy.
Add batter to mini waffle iron. Follow your manufacturers direction for using the waffle iron. The waffles will cook within minutes.
Stack waffles on plate, drizzle with melted butter. Add a dollop of whipped cream and sprinkles!

Creamsicle Doughnuts / #TasteCreations

This month we are all about Doughnuts at #TasteCreations, so I made some Creamsicle Doughnuts I would love to share with you! Would you do just about anything for a doughnut? I think a lot of people would! I lived in Las Vegas when the first Krispy Kreme opened in the city. Everyone was excited! The television news talked about it, it was in all the papers, and the lines were out the door everyday for at least a week. It seemed everyone had a story about waiting in line for the delectable doughnut! It was craziness, and everyone was talking doughnuts! Fun and a little nutty at the same time!
Well, these doughnuts are very tasty and easy to make, but I'm not sure they will get that much press! But, then again, you won't have to wait in line to get them! Even though they are worth it!
Creamsicle Doughnuts

(makes 15-17 doughnuts)

 2 cups Cake Flour
3/4 cup Sugar
2 teaspoon Baking Powder
3/4 cup Buttermilk
2 Eggs, lightly beaten
2 tablespoon Butter, melted
1 teaspoon Orange Extract
2 teaspoon Orange Zest
1/8 cup fresh squeezed Orange Juice from zested Orange
Orange Sprinkles

Glaze 
2 cups Powdered Sugar 
4-5 tablespoon Light Whipping Cream

Preheat oven to 350° F

Place the cake flour, sugar and baking powder in a large mixing bowl. Add the buttermilk, eggs, and butter. Mix together. Add the extract, zest and juice. Mix together.
Grease a doughnut pan.Fill each doughnut cavity with batter, about 3/4 full. Bake at 350 degrees for 6 1/2 -7 minutes. Remove from oven. Take a toothpick around the edges of the pan to loosen the doughnut a little. Let cool for 2 minutes, then remove from pan and cool.
Place all doughnut on a baking sheet, or something similar. This is where they will be iced.
Make the glaze by mixing together the powdered sugar and cream. Add the cream a tablespoon at a time until the glaze is thick but pourable.
Pour the glaze into a small bowl. Drop each doughnut onto the glaze, then lift off, let drip a little, and set back on tray.
Decorate doughnuts with orange sprinkles or jimmies, and enjoy!

Southwest Breakfast Spinach Wrap / #SundaySupper

Sometimes I feel as if breakfast is the toughest meal of the day to create something that is different, delicious, good-for you, and to make it something my family would want and enjoy. However, this Southwest Breakfast Spinach Wrap may just be the answer. The best thing about making this wrap is that parts of it are made ahead of time, and really all you are doing when you are ready to eat; in the wee morning hours, is putting it all together! 
One of the main things I love about this wrap is that I use pork in the recipe. But not just any pork. I used pork tenderloin, and it is awesome! I love pork for any meal, but I think it works great for breakfast, and the fact that it is tenderloin is just a bonus, because I found it at a great price, and I couldn't say no!
 Southwest Breakfast Spinach Wrap

1/4 cup Black Beans (cooked or canned)
4 ounces Shredded Pork Tenderloin
Garlic Powder
Ground Pepper 
4 ounces Fresh Spinach Leaves
Monterrey Jack Cheese (shredded)
2-3 Egg Whites
1 Green Spinach Herb Tortilla
1/2 Ripe Avocado
1 scoop Reduced Fat Sour Cream 


Cook the black beans according to package directions. Let them cool. If you would prefer, use canned beans and skip this step.

Slice the pork into approx. 1/4" thick pieces. Cook on the stove top in a skillet, on medium heat. Sprinkle the pork with garlic powder and ground pepper. Pork should be cooked to 145℉.  This is something you can do the night or day before making the wraps. Let pork cool a bit and then shred pork by pulling it apart. Keep in covered container overnight. 
Take 10-15 leaves of spinach, pull the stems off, and chop the spinach into small bite size pieces. Place the shredded pork, beans, and spinach in the skillet, and heat ingredients over medium heat.
Add the cheese and cook some more until it is melted.
While the cheese is melting, scramble the egg whites in another frying pan.
Start putting the tortilla together. Melt a tiny bit of butter in the pan, place the tortilla in it, with a little bit of cheese. Use as much or as little as you want. Let the cheese melt slightly as the tortilla starts to toast lightly. 
Add the pork and spinach mix to the tortilla. Roll the tortilla tightly. If you have difficulty rolling it in the skillet, remove it to a cutting board, roll, and place back in pan. Turn in pan as the tortilla browns.
Sprinkle more cheese on to the top of the wrap.
To help the cheese melt quickly, cover the pan with foil lightly wrapped around the plate. 
Garnish with avocado chunks and a scoop of sour cream. Slice wrap in half and have a great morning!

Country Skillet Breakfast / #SundaySupper

When you plan your Holiday meals, do you also plan what you will make with any leftovers you might end up with? How about a Country Skillet Breakfast! That's what we are talking about today. For Thanksgiving this year, I am serving both turkey and ham. I already know there will be ham left over. Most of my guests will enjoy the turkey, some will enjoy ham and a few will become a little full on both! I am offering the ham because we have a rather large group, and with both meats on the table, there is enough for everyone. The turkey will go first, and there will definitely be some leftover ham. I am trying a new type of ham this year. It is a boneless, spiral cut ham! Have you seen these? They are wonderful and tasty! There is no waste at all, and every bit of the ham can be eaten! I love that!
Knowing that I will have leftover ham, I am planning this Country Skillet Breakfast for my guests on Friday morning. It is easy to put together, and if you chop the onion, potatoes, and ham the night before, this skillet breakfast will be quick along with delicious!

 Country Skillet Breakfast

(makes 1 skillet)
Butter
3 small Red Potatoes (5-6 ounces) (chopped into bite size pieces)
1 1/2 ounces yellow Onion, chopped
5-6 ounces Ham, chopped 
1/4 cup shredded 4 Cheese
2 Eggs
Sour Cream 
1 fresh Chive, chopped


Pan grill the potatoes in butter. Grill until they become lightly browned.
In another pan, melt butter and saute onions until soft. After onions become soft, add ham. Let onions and ham cook together for 2 minutes.
Add onions and ham to the potatoes. Cook for 2-3 minutes. Add a light sprinkle of shredded cheese and mix.
Cook two eggs, how you like them. 
Add the potato mix to the skillet. Sprinkle cheese on top. Reserve a teaspoon of cheese.
Place the eggs on top of the potatoes. Place a small scoop on top of the eggs. Sprinkle with pepper, chives and the reserved cheese.
This recipe also works when made with leftover turkey!
