Cheesy Pepperoni Pizza Dip / #15 Minute Friday

After school snacks were a necessity in our house when my son was growing up. Sometimes the snacks were a treat that I bought, and sometimes they were something I made earlier in the day. It all depended on how busy I was at work. These days I have a lot more time, but my son is grown, and not looking for after school snacks. But, sometimes I see things at the grocery, and they are just too cute to pass up. That is how this Cheesy Pepperoni Pizza Dip happened!

 Cheesy Pepperoni Pizza Dip

1-13.8 ounce Pillsbury Pizza Crust
1 1/4 cup Pizza Sauce
Hormel Pepperoni Mini's
Shredded Mozzarella Cheese


preheat oven to 425℉

Open the pizza crust and spread it out on a pizza pan. You can use a baking sheet or anything that is oven safe. Bake for 11 minutes, but watch the crust to make sure it cooks thoroughly. 
Remove pizza crust from the oven and cool on cooling rack. Turn oven to 325 degrees.
Place half of the pizza sauce in a bowl. Add mini pepperoni pieces around the top of the sauce. 
Place the rest of the sauce on top of the pepperoni pieces. Just spoon it right on top. Place pepperoni pieces on top of sauce, just like the first layer. Place shredded mozzarella on to the top of the pepperoni's.
Place in oven and bake for 3 minutes. Turn to broil and broil for 1 minute.
Cut the pizza crust into strips for dipping.

Southwest Chipotle Pulled Pork Naan Bread Pizza / #SundaySupper / #Nourish2Flourish

Southwest Chipotle Pulled Pork Naan Bread Pizza is one long recipe title, but it is one of the quickest, freshest meals you will ever put together! What's the secret?  You start with the Southwest Chipotle Nourish Bowl, which comes stuffed full of healthy, fresh veggies like cauliflower, kale, kohlrabi, and sweet potatoes. It also includes a Chipotle Corn Salsa and shredded Cheddar Cheese! Add some pizza sauce to the corn salsa, spread it on a piece of Naan bread, add the fresh veggies from the Nourish Bowl, top it with pulled pork, add cheese and dinner is ready! Three pizzas from one Nourish Bowl! Wow!
I think it is pretty much a given that life today is hectic and to find something to eat that is tasty, quick and healthy is a struggle. You will find that the Nourish Bowls are each a healthy meal in themselves with no need to add anything if you don't want. Southwest Chipotle Pulled Pork Naan Bread Pizza

(Makes 3 pizzas)

1/4 - 1/2 pound Shredded Pork
Southwest Chipotle Nourish Bowl
3-4 pieces Naan Bread
4 tablespoons Pizza Sauce 
Shredded Mozzarella Cheese

Sprinkle a pork loin with garlic powder and cook it in the oven at 350 degrees until it reaches 140 degrees. Take it out of the oven and let it sit until it reaches an internal temperature of 160 degrees. When it is done, shred some pork for your pizzas. You will only need about 1/4 to 1/2 pound of the loin for the pizzas.
Open Nourish Bowl. Remove packet of Chipotle Corn Salsa and Cheddar Cheese. Add 4 tbl. of water to bowl. Microwave 3-4 min

While the veggies are cooking, pour the salsa packet and the pizza sauce in to a bowl and mix together. 

Divide the salsa/pizza mix between the three naan bread. Spread mix onto the bread, as close to edge as you can. Add additional sauce directly to the bread, if needed.
Remove the veggies from the microwave and add them to the top of the sauce on each pizza.  
Add the pulled pork on top of each pizza.
Sprinkle mozzarella and some of the cheddar on to each pizza.
Bake at 350 degrees for 15-20 minutes.
 Remove from oven, slice and enjoy!

    Southwest Chipotle Pulled Pork Naan Bread Pizza

    INGREDIENTS:

    • 1/4 - 1/2 pound Shredded Pork
    • Southwest Chipotle Nourish Bowl
    • 3-4 pieces Naan Bread
    • 4 tablespoons Pizza Sauce
    • Shredded Mozzarella Cheese

    INSTRUCTIONS:

    1. Sprinkle a pork loin with garlic powder and cook it in the oven at 350 degrees until it reaches 140 degrees. Take it out of the oven and let it sit until it reaches an internal temperature of 160 degrees. You will only need about 1/4 to 1/2 pound of the loin for the pizzas.
    2. Open the Nourish Bowl and pull out the packet of Chipotle Corn Salsa and the packet of Shredded Cheddar Cheese. Set aside. Add 4 tablespoons of water to the bowl. Place in microwave and heat for 3-4 minutes.
    3. While the veggies are cooking, pour the salsa packet and the pizza sauce in to a bowl and mix together.
    4. Divide the salsa/pizza sauce mix up between the three naan breads. Spread the mix onto the breads, coming as close to the edges as you can. If you would like more sauce, add additional pizza sauce directly to the naan bread.
    5. Remove the veggies from the microwave and add them to the top of the sauce on each pizza.
    6. Add the pulled pork on top of each pizza.
    7. Sprinkle mozzarella and some of the cheddar on to each pizza.
    8. Bake at 350 degrees for 15-20 minutes.
    9. Remove from oven, slice and enjoy!

Pizza Steak Hoagie / #SundaySupper

Today, we are celebrating pizza, and I thought I would share my very favorite pizza item, the Pizza Steak Hoagie. Growing up, the pizza steak hoagies that I loved were made with cube steak slices that were pounded down and tenderized. I thought I would change that up by using filet mignon for a taste that simply melts in your mouth. 

 

Pizza Steak Hoagie

(makes 2 Sandwiches)
1-8 ounce Filet Mignon
1/2 medium Onion
1/2 cup Mozzarella Cheese, shredded
Pizza Sauce
2 Hoagie Rolls

Trim the fat edges off of the steak.  Cut the steak across the thickness of the steak. Use a meat mallet to pound down in to thin slices. Cut off any large fat pieces you may have missed.

 Slice onion in to thin slices.
Cook the fat in a frying pan. Remove the fat pieces, but leave the juice from the fat.
In a separate pan, saute the onions in a pat of butter.
Pan fry the steaks, to medium rare, in the pan where you cooked the fat. 
Spread the pizza sauce on to the bread. Add the sauteed onions to the bottom piece and the cheese to the top piece.
Place under broiler until onions are hot and cheese is melted.
Place meat on top of onions.
Enjoy your Pizza Steak Hoagie!

Mini Pizza Pockets / #SundaySupper

These Mini Pizza Pockets are the perfect finger food! They are simple, quick to come together, and they taste amazing! Finger foods are fun to eat! They are great for impromptu parties on the back porch, wonderful with wine when you want to relax and unwind, and great to serve to kids who think they are fun, cute and just their size! Finger foods make the meal casual and fun!

 Mini Pizza Pockets
(printable recipe)
Makes 12-15
28 oz. can San Marzano Plum Tomatoes
1 small slice of fresh Garlic
1 teaspoon Mrs. Dash Italian Medley Seasoning
1 teaspoon Sugar
1 small leaf of fresh Basil
1 tube of Pizza Dough Crust
4 ounces of Fresh Mozzarella Cheese

1 egg
Shredded Asiago Cheese

Preheat oven to 425 degrees.

Open the can of tomatoes, and drain the juice. Place the tomatoes in to a food processor or blender, and puree. Place in pot and put on medium heat.

Slice a small piece of fresh garlic from a clove, chop in to small pieces and add to sauce.
Homemade pizza sauce
Add the seasoning and sugar to the tomatoes. Take a leaf or two of basil and tear it into very small pieces; add it to the sauce. Bring sauce to a simmer, maintain heat on low.

Roll out tube of pizza crust. Use a 3 1/2" round cookie cutter and cut circles out of the dough. Re-roll the extra dough until you have enough rounds. Take the melted butter and brush it around the outside of the pizza dough round. On each round, place a 1/2 to1 teaspoon of sauce and a small cube of cheese on top. It may look as if the sauce will not fit and will over flow when you fold the dough, but the dough will expand when it is baking, making plenty of room.

Fold the rounds in half and place on a parchment covered baking sheet. Bake for 7-8 minutes.

Serve with pizza sauce garnished with shredded asiago cheese.

Southwest Santa Fe Pizza

My love of Las Vegas is no secret. It is where I spent most of my adult life. It is where I  graduated college, and got engaged. It is where my son was born, and my husband and I went into business. We picnicked at Mt. Charleston, hiked Red Rock and skied Lake Mead. Needless to say, Las Vegas is such an important part of me, and close to my heart. I've teamed up with Vegas.com and I am excited! The Annual International Pizza Expo that is held in Las Vegas every year is coming up in March, and I am taking part in a fun challenge to create a unique pizza that is inspired by one of the hotels. I created a pizza that is southwestern in style, inspired by the Santa Fe Hotel and Casino.

Fajita Pizza

This Fajita Pizza is perfect when you are looking for something that is quick and easy to make for dinner. I bet you have most of the ingredients in your pantry or fridge. My family and I have been eating some version of this pizza for many years, and we never get tired of it! We have made it with just sauce and mozzarella, shredded chicken tossed in hot sauce topped with onions and 4 cheese mix with ranch on the side, and with alfredo sauce and chicken, scallions and fresh mozzarella. For us, the main ingredient is the tortilla crust. That is what makes it quick and tasty!

Breakfast Pizza!

This month the two ingredients for the Improv Cooking Challenge are bacon and eggs! I love these two ingredients, don't you?  I had a hard time deciding what I should make.  Should I go with breakfast, dessert, or an entree maybe? I finally decided on this breakfast pizza, and I am so glad I did! It was different and it was delicious. I think you will agree!
Breakfast Pizza
Shredded Potatoes
Chopped Onions
Chopped Red, Orange, and Yellow Peppers
Slice of Fresh Tomato, chopped
1 Egg
Pizza Sauce
Flour Tortillas
2 pieces of Bacon per Pizza
Fiesta Blend Cheese
Chopped Avocado
Sour Cream
Start your potatoes cooking on your stove top. 
Chop up your peppers, tomato, and onion.
Add the onions to the pan with the potatoes.
Saute your peppers in your frying pan.
Scramble your egg.
Place your tortilla in a frying pan, and spoon some sauce
 over the tortilla. Heat on medium.
Spread some potato and onion mix on top of the sauce.
Sprinkle some cheese over the potatoes.
Add your cooked egg by spreading it over your pizza.
Add your peppers.
Chop or tear your bacon into pieces, 
and spread the pieces evenly over your pizza.
Add some more cheese over the top.
Check bottom of your tortilla. 
It should be slightly brown and firm.
The cheese should also be melting by this time.
Take the pizza off the heat and add your chopped 
avocado pieces, and a dollop of sour cream.
