Boys of Fall Cupcakes!

The dessert for this week is named after the song by Kenny Chesney,  "The Boys of Fall". I thought it would be fitting to end the week of Football Feasts with a  cupcake about football.
 Chocolate Cupcakes
(adapted from Southern Living)
5 eggs, separated
1/2 cup Butter, soft
1/2 cup Shortening
2 cups Sugar
2 1/4 cups Flour
1/4 cup unsweetened Cocoa
1 teaspoon Baking Soda
1 cup Buttermilk
2 teaspoons Vanilla Extract
Make sure you separate the eggs before beating them.
You only want to work with the whites first. Set the
yolks to the side. Beat the whites until they form stiff
peaks.
Set them aside. I put mine in another bowl after mixing. 
I needed the bowl for my mixer to make the rest of the recipe.
Beat the butter and shortening until creamy.
Gradually add sugar, mixing thoroughly.
Add the egg yolks, 1 at a time, mixing well.
In a separate bowl, mix the flour, cocoa, and baking soda.
Use a whisk to really mix up the ingredients.
Begin adding the dry ingredients, then add a little 
buttermilk, and mix. Continue adding like this until it is 
all mixed together. Add the vanilla. Beat.
Fold in the egg whites.
Place in cupcake wrappers and cook at 325 degrees
for 20 minutes. 
I used a recipe for the cookies called
No Fail Sugar Cookies. I love this recipe, and always use it.
We have made it before here.
Make the recipe and then cut out the dough with a football
cutter. Cook the cookies according to the
directions here.
Frost the cookies like we did this time.
Use green frosting and a Wilton tip #233 to make grass
all over the cupcake.
Add mini Fall leaves to the top of the cupcakes.
Add the cookie to the cupcake like this.

Stuffed Meatballs!

Todays addition to our Football Extravaganza is Stuffed Meatballs! These meatballs are moist and delicious and the mozzarella centers make them extra special.
 
Stuffed Meatballs
(adapted from Perfect Party Food)
1 pound Ground Beef
1/2 cup chopped Onion
1/2 clove Garlic, minced
Grated zest of 1/2 Lemon
1/2 teaspoon Black Pepper
3/4 cup Parmesan Style Bread Crumbs
2 Large Eggs, beaten
Oil for frying

Chop your onion.
Put the ground beef and the onion in a bowl.
Add chopped garlic.
Zest the lemon and add it to the bowl.
Add the black pepper, bread crumbs, and the eggs.
Mix together.
Use a scoop if you have one, if not just form with your hands.
Then flatten the meatball just slightly, and
insert a piece of cheese in the middle of the meatball.
Form the meatball over the cheese until it is a round ball again.
Make all the meatballs.
Start cooking the meatballs in the oil in the pan.
Turn the meatballs as they get brown.
While the meatballs are cooking, cook the marinara.
Canola Oil
1 1/2 teaspoon Salt
1/2 teaspoon Pepper
1/2 cup Finely chopped Onion
San Marzano Tomatoes, peeled 
1 teaspoon Sugar
Put the tomatoes in the food processor  and chop.
If you don't have a food processor, cut by hand into small
bite size pieces.
It should look like this.
 
 Cut the onions.
In a pot, heat your oil, and the add the onions. Cook the 
onions until they are clear. Ignore the tomatoes in the pictures.
I dropped a spoonful in the pan when I was moving them. Sorry!
Add the tomatoes, salt, pepper, and sugar.
Let simmer. Then let the sauce cook for 30-45 minutes.
Stir occasionally until thicker.
As the meatballs brown, add them to the sauce. Let
them cook in the sauce for about 1/2 hour. Then serve.

Chicken Wings!

Nothing says football like chicken wings! We made a few for our football feast party, and we served them with BBQ sauce, Hot Sauce(Medium), Homemade Ranch, and Homemade Blue Cheese. One good thing about serving wings at your football get together?  Everyone loves them!
 
Fried Chicken Wings
Chicken Wings
Hot Sauce
BBQ Sauce
Carrots
Celery
Put the wings in a deep fryer set at 350 degrees. You
can also bake these in an oven at 400 degrees for 
25-35 minutes if you would rather.
While the wings are frying, cut up the celery and carrots.
 Trim out the celery by cutting off the leaves and the top. 
Slice thick celery down the middle, then slice those slices
in half length wise. 
 It always looks nice if you can make all
the celery pieces as close to the same length as possible.
 Peel the carrots, cut them down the center lengthwise,
then slice into pieces the same length as the celery.
 
 Time to check on your wings. Check on the temperature 
of the wings. They should be cooked until 165 degrees.
Pull them out and let them drain. 
While they are draining, get your sides all together.
To make your hot sauce a little less hot, melt some butter, 
and add the butter to your hot sauce. Mix together.
Add some BBQ sauce to a bowl, and heat if you want.
Place both sauces, and both dips, along with the
vegetables near your platter of chicken.
 Homemade Ranch Dip
(from Cooks.com)
1 cup Mayo
1/2 cup Sour Cream
1 teaspoon Garlic Powder
1 teaspoon Dill Weed
1/4 cup Buttermilk
1 tablespoon Dried Parsley
1 teaspoon Onion Powder
Lets make our Ranch Dip first. We need to let both 
dips sit in the fridge for a few hours before serving them.
Mix together the mayo and the sour cream.
Add the garlic powder, dill weed, buttermilk, parsley,
and onion powder. Mix together until well blended.
Refrigerate for at least 2 hours before serving.
 Blue Cheese Dip
1 1/2 cups Mayo
1 cup Sour Cream
2 teaspoons Worcestershire Sauce
1 teaspoon Dry Mustard
1 teaspoon Black Pepper
1 teaspoon Garlic Powder
6 ounces Blue Cheese, crumbled
Mix all or the ingredients together.
Add the blue cheese. Mix well. 
Refrigerate for at least 2 hours.
