Chocolate Frosted Shortbread Bites

A few days ago I was a guest blogger, and I shared these wonderful Chocolate Frosted Shortbread Bites. Well, I wanted to share them with all of you also, so here they are!! These tiny cookies are the perfect little snack for mid morning or after school or pretty much any time! They have a deep buttery taste, and the little bit of chocolate provided a top layer of yummy  flavor! I know you are going to love these simple treats!
Chocolate Topped Shortbread Bites
(adapted from Wilton)
1 cup Butter
3/4 cup Sugar
1 teaspoon Vanilla Extract
2 1/2 cups Flour
2/3 cup Chocolate Chips-melted
Preheat your oven to 350 degrees.
Cream butter, sugar and vanilla together.
Add your flour and mix until dough is smooth.
I used this silicone pan to make my bites.
Spray the pan with pan spray.
You could also roll out the dough and
cut the dough into small squares before cooking.

I just eyeballed the size when I made these balls.
I made one, and then pressed it into the mold.
As long as it covers the bottom and is 1/8" thick,
your cookies will be good.
I thought it was great that I was making
24 cookies at one time!
Cook for 10-15 minutes or until light brown.
Don't over cook. They will get very hard.
Let cool.
Melt your chocolate while your
cookies are baking and cooling.
Pipe a dollop of chocolate on top of each square.
Let the chocolate set up a little.
Enjoy!
Thanks for joining me today!

Creamy Peach Hand Pies

Today I am participating in the Behind The Curtain Dessert Challenge. This is a fun challenge that really gets your creativity flowing. This months two ingredients? Peaches and Cream. Can you say yum!? I wanted to make something special, and several different ideas came to mind, but these Creamy Peach Hand Pies were the clear winner! They are simple to make (I used ready made pie crust), incredibly cute, and you can be sure that whoever tastes these pies will love them!
Creamy Peach Hand Pies
(loosely adapted from A Feast for The Eyes)

3 ripe Peaches
1/4 cup Sugar plus 2 teaspoon Sugar
1 1/2 tablespoons Flour
Pinch Salt
1 1/2 ounces Heavy Whipping Cream
1 large Egg Yolk
1/4 teaspoon Vanilla
1/2 teaspoon Cinnamon
1 box unbaked Pie Shells
1 Egg,  beaten
Peel, halve, and pit your peaches.
Place your peaches in a pan on top of the stove.
Heat the peaches over medium heat until they are soft
and the juices have emptied into the pan.
This will help prevent the crust from becoming soggy.
This should take about 10-15 minutes.
Once the peaches are nice and soft, cut the peaches
into thin slices. Set aside.
Mix together the 1/4 cup sugar, flour and salt.
In a separate bowl , mix together the cream, egg yolk,
vanilla and cinnamon. Add in the dry ingredients and mix
until smooth.
Pour the cream mix over the peaches.
This is the pie mold that I used. It isn't really necessary
to use this mold to make the pies, but it is fun to use!

Place the closed mold on the pie crust.
Cut two for each pie. One will become the
pie top and one will become the pie bottom.
Set your mold up like this. I put 2 teaspoons of
peaches and cream filling in each pie.
Edge each of the pie crust pieces with the beaten egg.
This will help the edges stay together.
Fold the two pie pieces together.
Pierce the pies in a few places, and sprinkle with the
2 teaspoons sugar. Bake at 400 degrees for 18-20 minutes.
Enjoy your pies!

Thanks for joining me today, and please check out
all the other recipes for today's challenge!

10,000 Pinterest Followers Cash Giveaway!

My friend, Carrie from Frugal Foodie Mama is having a great giveaway! The prize is cash!! What could be better than that? Don't hesitate. Enter today. This giveaway ends next Sunday!!
Good Luck!

Sooooo... last week some of you all may have noticed my little announcement on Facebook that I finally reached a blogging milestone that had been eluding me for a little while now...
I reached over 10,000 Pinterest followers!!  I finally hit 5 figures! ;)

I knew a milestone like this was cause for a HUGE celebration on the blog.  And when I say celebration, you all really know that I mean GIVEAWAY!

I asked just *a few* of my favorite bloggy friends to join the party and help me in celebrating.  How are we celebrating?  By helping one of you make your Pinterest dreams a reality with a $400 Paypal Cash Giveaway- the biggest giveaway ever hosted on Frugal Foodie Mama!

How many of you all have Pinterest projects and ideas that you have had pinned for months, longing to do them, but maybe the price tag is holding you back?
*Raising hand here*
Would $400 to spend any way and anywhere you would like help out just a little with that?
Yeah.... I thought so. ;)

Of course if you win, you can spend the Paypal cash any way that you would like.  But how fun would it be to finally splurge on a little something you have had pinned away on one of your Pinterest boards??

If you do not have a Paypal account presently, you WILL have to set up one if you win.  I will only be able to transfer the funds via Paypal.  Paypal is great because it is accepted with most online shops and you can transfer funds to your checking account once you have connected the two. :)  Pretty cool, right?

Please read through ALL the giveaway terms and conditions below.  I am a stickler for them.  No joke, folks.

*This giveaway is open internationally.  All entries for the winner will be checked and verified, so please make sure you are doing what you are claiming in the Rafflecopter or all your entries will be voided.  No funny business, folks. ;)By entering you give the right to use your name and likeness. Number of entries received determines the odds of winning. One winner will be selected. The winner will be notified via the email they provide, and will have 48 hours to reply to the email.  If the winner does not reply back within the 48 hours, they forfeit the prize and a new winner will be chosen via Rafflecopter.  This is a giveaway sponsored as a group buy, which means the bloggers pooled their money together to purchase this product for you.  Paypal is not a sponsor of this giveaway.  The cash prize will be sent via Paypal directly from Carrie of Frugal Foodie Mama.  You must have an active Paypal account to receive the cash prize!  Entries must come from your MAIN social media accounts, not accounts that have been set up separately just for entering giveaways.  Entries from these types of accounts will be disqualified.  Protected tweets do not count as an entry method for tweeting. Tweets must come from a public account. Bloggers in this group giveaway and their immediate family members in their household cannot enter or win the giveaway. No purchase necessary. Void where prohibited by law.
Please see the Rafflecopter widget below for additional Terms & Conditions.  Good luck, all!

Biscoff and Toffee Popcorn

Do you like Biscoff? I just love it! I keep waiting for the time I am grocery shopping, and I don't buy 2 jars! I think it is clearly on it's way to being an obsession for me. So I guess I will have to feed this craziness until it stops. It's the only thing I can do!  :) I am also loving toffee and popcorn right now, so I thought I would put them all together, and make the ultimate treat! So, yum!
Biscoff and Toffee Popcorn
2 bags of popped microwave Popcorn
1 cup of Biscoff Spread
1/2 cup of Heath English Toffee Bits
Melt the Biscoff in a double boiler...
 until it is smooth.
Pop your popcorn, 1 bag at a time.
It is easier to control when you are mixing the popcorn.

Pour the melted biscoff over the popcorn,
Mix the biscoff and 1 bag of popcorn together.
After the first bag is mixed together, add the other bag in.
Add the toffee bits and mix in.
Spread the popcorn into a large pan, spread it out so it can dry.
After it is dry, munch out and enjoy!

Thanks for joining me today!
Stop by again!
