Chocolate Mint Bread Pudding

Spring is in the air and so is mint. Of course chocolate is always in season in my kitchen, so I put the two together to make this decadent Chocolate Mint Bread Pudding. The mint comes from Oreo Mint Fudge Cookies, my newest, yummy addiction. Add semi sweet chocolate chunks, and you have a rich, tasty bread pudding that you can't get enough of.

Linzer Buttercream Spring Cookies

I am really ready for spring! So, in the hopes of nudging things along, hoping that it might arrive earlier, rather than later, I made some Linzer Buttercream Cookies in spring colors! I used the daisy cutout for the center because that was the only cutout that was "spring like". Then wouldn't you know that I was at HomeGoods yesterday, and I saw a Linzer cutout set made just for spring! Oh well! I hope these cookies make you smile!

Chicken Sausage and Mushroom Flatbread Appetizer

This month for the Improv Cooking Challenge I made a Chicken Sausage and Mushroom Flatbread Appetizer. Our necessary ingredients were sausage and mushrooms. I added scallions and red, yellow and orange sweet peppers as a topping and a homemade sausage gravy as the base. It has the appearance of a fancy pants appetizer with a "just plain folks" taste you are going to love.

Happy St. Patrick's Day to everyone! I hope you have a wonderful and lucky day! Irish Stew

I make Irish Stew every year. Earlier this year, I bought a new cookbook called, "The Complete Irish Pub Cookbook". So, I decided to try their recipe this year, and I liked it.  If possible, make the stew a day ahead of time. The extra time allows the flavors to meld together for a rich, deep taste. As in most years, I used beef in place of the lamb. I hope you enjoy it!

Choclava Pillows

What are Choclava Pillows? Well, they are pastries made with puff pastry sheets and filled with a mix of nuts, specifically: walnuts, peanuts, pecans, almonds, pistachios, and hazelnuts. I used Planters NUT-rition Mix. Then add in some semi sweet chocolate and honey. Don't forget to dust them with powdered sugar and drizzle with chocolate glaze! That's a Choclava Pillow and they are my dessert for this months Lady Behind The Curtain Dessert Challenge. Our ingredients this month are walnuts and honey! Yum!! I hope you enjoy these Choclava pillows as much as I enjoyed making them!

Magically Delicious Leprechaun Sticks!

These St. Patrick's Day Leprechaun Sticks are tasty and maybe a bit magical. How about magically delicious? Yeah, that sounds like it might have been used before. Leprechaun Sticks are cookies, in stick form with frosting and sprinkles. Their magical powers have not been formally documented, but they do disappear quickly and they are delicious!
