Mini Mango Cheesecake for #SundaySupper

When I was first married, I really didn't cook often. My husband and I lived in Las Vegas at the time, and there was never a less expensive place to eat out. Plus, we both grew up hardly ever eating out, so it was a treat we enjoyed often. Fast forward several years, and I cooked at home daily after my son was born. I started keeping track of recipes I used by writing notes in cookbooks or on newspaper clippings reminding myself why I made it and what we thought of it. They were reminders of parties, great times and what we served. So when I opened a binder stuffed with recipe copies, my eye stopped on the notes I made in the margin of this cheesecake recipe. It read: Alex's Kindergarten Graduation 6/96. Oh goodness, the memories! Alex is 25 now, but this cheesecake will forever make me think of him as that little boy proudly walking across the stage to become a first grader!
Isn't that the best thing about food? It evoke memories of good times, good food, and good friends!

Springtime Chocolate and Almond Biscotti

It's finally spring! So to celebrate, I made Springtime Chocolate and Almond Biscotti! They have the crisp outside of biscotti, and they are filled with the sweet taste of Springtime morsels. Then, about a quarter of it is dipped in chocolate and decorated with sprinkles! Sounds yummy, doesn't it! This biscotti would be the perfect addition to your Mother's Day luncheon or dinner, May Day celebration, or even an end of school teacher's luncheon!

Have you heard about the savings event going on at Publix? With the arrival of spring, my family and I immediately start to spend more time at home. But not just anywhere in the house. We are all drawn to the covered back porch, where we spend a great deal of time enjoying music, chatting about our day, munching on snacks, and just hanging out. This time of year I want to make sure I have lots of the snacks we love in the house, so I decided to stock up during the Snack Share Save Event at Publix. Southern Grilled Cheese/#FoodieExtravaganza

     It is Foodie Extravaganza day and grilled cheese is on the menu! Southern Grilled Cheese, that is! I grew up eating grilled cheese sandwiches every Friday for dinner. They were made on white bread with american cheese, and we usually had tomato soup to go along with it. It was okay when I was a child, but my tastes have changed, and for the better!
     I wanted a grilled cheese that was different, but made with ingredients that are loved by pretty much everyone. So, I present to you: Southern Grilled Cheese, made with breaded pork, swiss and manchego cheese, and an avocado and cream cheese spread, served on grilled wheat bread. I think you are going to like it!
