The Freshman Cook: Chocolate Mint Bread Pudding

Spring is in the air and so is mint. Of course chocolate is always in season in my kitchen, so I put the two together to make this decadent Chocolate Mint Bread Pudding. The mint comes from Oreo Mint Fudge Cookies, my newest, yummy addiction. Add semi sweet chocolate chunks, and you have a rich, tasty bread pudding that you can’t get enough of.

Chocolate Mint Bread Pudding

1 cup Oreo Mint Fudge Cremes + extra for the top

5 cups stale Bread Cubes

8 ounces Milk

8 ounces Heavy Whipping Cream

1/4 cup Butter

1 cup Sugar

1/2 cup Semi Sweet Chocolate Chunks

2 large Eggs

pinch of Salt

1/4 teaspoon Nutmeg 

1 teaspoon Cinnamon

1/2 teaspoon Vanilla

Whipped Cream

1 cup Heavy Whipping Cream

1/2 cup Confectioners Sugar

Preheat oven to 350 degrees.

Chop your cookies in half, and then in thirds. Set aside.

Chop your bread cubes in to bite size pieces. Set aside.

I used some white and some wheat rolls that got a little hard.

I always freeze them for bread pudding emergencies.

Heat your butter, cream and milk over low heat.

Add sugar and mix to dissolve.

Beat your eggs together. Add salt, nutmeg,

cinnamon, and vanilla.

Add the egg mixture to the milk and cream that is already on the stove.

Blend together by stirring.

 Pour your bread pieces into a large bowl.

Add the mix to it and stir.

Add your chopped up cookies

and your chocolate chunks. Mix together. 

They will start to melt a bit.

Place in individual dishes to bake. These are 8 ounce bowls.

You could also use a 9×9 baking dish if you want to cook

this all together and then cut out pieces. 

Bake for 20-25 minutes in the bowls, 40-45 in a baking dish.

While your bread pudding is baking, melt a 1/2 cup

of chocolate chunks in a double boiler.

Make your whipped cream by placing 1 cup

of heavy duty whipping cream in a bowl.

Use a whisk beater to mix the whipping cream on 

medium first, then turn it to high as it begins to thicken.

Add sugar and continue to beat until stiff peaks develop.

Using a 1M tip from Wilton or any pretty design tip,

pipe the whipped cream onto your bread puddings.

If you are baking in a single dish, cut the bread pudding

 and decorate each piece.

Drizzle melted chocolate over the top of the whipped cream.

Top each dish or piece with half of an 

Oreo Mint Fudge Creme cookie.
