This Apple Pear Crisp is topped with some oats and brown sugar. I like mine pretty wet, like I made this, but if you want a little drier topping, just mix in additional flour. These crisps would also be so incredible with cranberries added as a third fruit. One nice feature of this recipe is that it can be made ahead of time. Once you get to the topping you can refrigerate the crisps until you want to enjoy them, then just pop it in the oven! Perfect for Thanksgiving or Christmas when things can get a little hectic!

Apple Pear Crisp
(printable recipe )
makes 4-8 oz. crisps
2 Granny Smith Apples
2 Anjou Pears
1/4 cup Lemon Juice
3/4 cup Apple Juice
1 teaspoon Cinnamon
1/4 cup Sugar
2 tablespoon Water
1 tablespoon + 2 teaspoons Cornstarch
2 tablespoons Butter (softened)
1/4 cup Brown Sugar
1 tsp Flour
1/4 cup Oats
Peel and slice the apples and pears. Place the lemon juice in a bowl and as you slice the fruit, add it to the lemon juice.
Remove the apples and pears from the lemon juice and place them in a medium pot. Add the apple juice, cinnamon, and sugar and bring the pot to a boil. Let the fruit cook until it is soft, 5-7 minutes. While they are cooking, prepare an ice bath by placing ice in a large bowl that is big enough to hold the pot.
Make a slurry, which will thicken the apple mixture, by placing the cornstarch in a small bowl and then add the water, by mixing with a small spoon. Add the slurry mix to the apple mix and stir. The mix will begin to thicken. You can see how thick the mix has become by dipping a spatula in it. This looks thick and good. Remove pot from the stove. Set in the sink or to the side.
While the mix is cooling, mix together the butter, brown sugar, flour and oats with a fork or small mixer.
Fill 4 bowls with apple mixture. Place the oat mixture on top of each bowl. If you want to enjoy these later, cover with plastic wrap and refrigerate until you are ready. If you are ready to eat, bake in the oven for 10-15 minutes. Remove from oven and enjoy!
