Apple Hand Pies with an Oatmeal Crust / #appleweek

For my final recipe of #appleweek, I wanted to make something traditonal, but special. I had so much fun creating these recipes, and I hope you will make and enjoy them! This Apple Hand Pie with an Oatmeal Crust is made with cooked apple pieces wrapped in an easy oatmeal recipe. They are cute, yummy and you can’t eat only one!

Apple Hand Pies w/an Oatmeal Crust

(makes 5-6 pies)

Crust
1/2 cup Flahavan’s Irish Oatmeal
1 cup Flour
1/3 cup Light Brown Sugar, packed
1 tablespoon Ground Walnuts
1/2 teaspoons Baking Soda
Pinch Salt
1 Egg
1/2 teaspoon Butter, melted

Filling
1 Apple
1/2 teaspoon Lemon Juice
1/4 teaspoon Rodelle Vanilla
1 1/2 tablespoons White Sugar
1 1/2 tablespoons Brown Sugar
1/2 teaspoon Cinnamon
1/4 teaspoon Nutmeg

In a large bowl mix together the oatmeal, flour, light brown sugar,ground walnuts, baking soda and salt.

In a small bowl, beat the egg with an immersion blender if you have one. If not, use a mixer. Add the beaten egg to the crust mix and mix together. Form the crust into a circle, wrap in plastic, and refrigerate for an hour. 

Wash, peel and chop the apples. The pieces need to be small to fit properly in the little pie. Place in a frying pan.

Season apple pieces with the lemon juice, vanilla, both sugars, cinnamon and nutmeg. Cook until soft, but with a little firmness, approximately 5-10 minutes. Let cool. 

Remove the dough from the refrigerator and roll out with a rolling pin to 1/8″ inch. Cut the circles, remembering you will need 2 pieces for each pie. The cutter I used is 3 1/2″ round, but of course, any size will work.

Place 1/2 teaspoon to 3/4 teaspoon of the filling in each bottom piece of the pie.

Place a top piece on each pie, and using a fork, move around the pie, marking it wth the tines of the fork. Brush the top with some of the melted butter. Preheat oven to 375 degrees. Bake for 5-7 minutes. 

Cool on a cooling rack and serve!
