Candy Cane Popcorn!!

Every Christmas I make a lot of gift baskets filled with food. I stuff them with cookies, candies, and nuts, and sometimes I add sauces, like BBQ or hot fudge. The process of putting it all together, deciding what recipes to make, and how to package the goodies is a source of great joy to me. When I see how happy recipients of the baskets are, it really is a present ~ for me! This year I have an abundance of glass jars (remnants of my biscoff obsession) that I wanted to put to good use. I wanted something that would look pretty and taste great. That's how I came up with this Candy Cane Popcorn!
Candy Cane Popcorn
16 cups popped Popcorn
12 squares of Vanilla Almond Bark
20 Candy Canes
Pop your popcorn and chop up your almond bark.
Let it melt slowly, stirring and using low heat.
Meanwhile, line 2 baking sheets with parchment.
 Crush your candy canes into small pieces.
Pour your popped corn in to a large bowl. 
You will need a large bowl for extra mixing room.
 Add your melted  almond bark. Mix thoroughly.
Distribute the wet popcorn between the two
baking sheets.
Sprinkle with your crushed candy canes.
Let dry.
Here is a close up to see how it sticks to the
popcorn with the help of the melted bark.
To make the jars I tied bakers twine around the lid,
 stuck a mini candy cane in the bow, and.....
 decorated the top of the lid.
They will be the perfect addition 
to the gift baskets!

Happy 4th of July!

Happy 4th of July to everyone!
 To finish off my "15 Days of Red, White and Blue" series I have one last holiday treat for you.

Red, White and Blue Popcorn! 
2 Bags of plain Popcorn
3/4 cup Sugar
1/6 cup Water
1 tablespoon Butter
Americolor Holiday Red
Americolor Royal Blue
Americolor White
Pop your popcorn.
I only had microwave popcorn and it worked fine.
Divide equally among 3 plastic bags.
 
Put your sugar, water, and butter in a saucepan
and bring to a boil.
Once it has boiled, divide the liquid among 
3 bowls.
Color the liquid in each bowl.
I just happened to have a white color, put if you don't
leaving it plain liquid will work just fine.
Add the colored liquid into the bags, one at a time.
If you have gloves, use them. You can also wrap
your hands with plastic wrap.
Using your hands move the popcorn around in the bag
coating the popcorn. You may be able to coat the 
popcorn by tossing it in the bag.
Do this to all three colors.
Lay out each color of popcorn on 
parchment paper to dry.
Separate the popcorn pieces from one another
so they do not clump together.
It will take about an hour for the popcorn to dry.
Mix all the popcorn together.
You can mix in M and M's, pretzels, nuts,
marshmallows, anything you want!

White Chocolate Popcorn - Dessert in A Bowl!!

This weeks dessert is the perfect casual and fun treat for family movie night, neighborhood BBQ's, slumber parties, or even football parties. It's super easy to make, and slightly addicting!
White Chocolate Popcorn
2 (3.3oz) bags Microwave Popcorn
2 cups salted Peanuts
2 cups Craisins
2 (11oz) bags White Chocolate Chips
1 teaspoons Cinnamon
Microwave both bags of popcorn according 
to the bag directions.
We need a double boiler to melt the chocolate chips. 
Using a double boiler assures you that the chips
won't burn while they melt, because they are melting by 
indirect heat. Because I don't have a double boiler, I made my own. 
Fill a bottom pan with about 2-3 cups of water. 
Place a saucepan on top of the pan with the water.
The top pan should sit securely on the bottom pan.
It can lean, but it cannot touch the water in the pan.
It must stay up on the rim. Heat the water on medium high,
but do not let it boil.
Pour in 1 bag of chips to start melting.
Spray a spatula with pan spray.
Use the sprayed spatula to stir the melting white chocolate.
The spray will help the chocolate not stick to the spatula.
Add the second bag of chips to the pot
and melt them all together.
Put the popcorn in a large pot.
Add the peanuts.
Add the craisins.
Add the cinnamon.
Spray 2 cookie sheets with pan spray.
Pour the melted chocolate into the bowl with the
popcorn ingredients. Mix thoroughly.
Pour the mixed popcorn onto the 2 cookie sheets.
Distribute evenly between the two.
Allow the chocolate popcorn to set up for about 
an hour.
Once the popcorn is set (you can tell by
just touching it to see if it is dry), use a spatula
to transfer it to whatever you want to
put it in, whether it is .....
a bowl...
or these cute little popcorn boxes.
