Banana Lime Cake
This Banana Lime Cake would be the perfect way to celebrate Mother's Day. It is full of banana flavor with a lime back up. It has a texture much like a banana bread, but a little denser, and it is the perfect pairing to a cup of coffee. It is drizzled with a lime frosting and accented with banana chips. I made this cake using a mini tube pan, and 2 disposable loaf pans, because I am mailing them. This mini pan is plenty for four people.

Fajita Pizza
This Fajita Pizza is perfect when you are looking for something that is quick and easy to make for dinner. I bet you have most of the ingredients in your pantry or fridge. My family and I have been eating some version of this pizza for many years, and we never get tired of it! We have made it with just sauce and mozzarella, shredded chicken tossed in hot sauce topped with onions and 4 cheese mix with ranch on the side, and with alfredo sauce and chicken, scallions and fresh mozzarella. For us, the main ingredient is the tortilla crust. That is what makes it quick and tasty!

Caramelo Cheesecake w/ a dulce de leche Cookie Crust

Tres Leches Mini Bundt Cake
This Tres Leches Bundt Cake is on the menu for our Cinco De Mayo party! The day is quickly approaching, and I am busy getting all the preliminary work done for the party. I hope you will be celebrating with us! I love tres leches cake, but this year I thought I might take some liberties with the traditional recipe, and make mine into personal bundt cakes. The recipe has not changed much, just the delivery vessel. This is one of my favorite cakes, and I hope you enjoy it!

Chocolate Boston Cream Pie Trifle
Today I made a Chocolate Boston Cream Pie Trifle! One of my favorite desserts from when I was growing up was a Boston Cream Pie. I was always fascinated with the fact that it was really a cake, but called a pie. Why? No one could tell me. I have since learned that the Boston Cream Pie was originally made in colonial times and the colonists used to bake cakes in pie tins because most people didn't have cake pans, only pie pans. Makes sense! So, fast forward to 2014. I decided to put a slight twist on the traditional and make my Boston Cream Pie with chocolate cake. Actually, I used a Dark Chocolate Fudge Cake. I transformed the pie into a trifle, making it something a little special, and I think it works. Let me know what you think!

Bunny Bark!
It's almost time to fill the Easter Baskets, so I'm glad I got this easy to make, Bunny Bark to you! Everyone would love getting this Bunny Bark in their Basket. Mr. McGregor's Marshmallow Carrots
These Marshmallow Carrots are not the ones that Peter Rabbit was munching on in Mr. McGregor's garden, but I think you will like them. You start with homemade marshmallow, cut out some carrots with a cookie cutter, add some orange sanding sugar, add some licorice greens, and you have a marshmallow carrot similar to a peep! It would have been fun if these had been growing in Mr. McGregor's garden!

Chocolate Mint Bread Pudding
Spring is in the air and so is mint. Of course chocolate is always in season in my kitchen, so I put the two together to make this decadent Chocolate Mint Bread Pudding. The mint comes from Oreo Mint Fudge Cookies, my newest, yummy addiction. Add semi sweet chocolate chunks, and you have a rich, tasty bread pudding that you can't get enough of.
