Apple Crisp Hand Pies / #FlavorsofFall

One of my favorite #Flavors of Fall is not one flavor at all, but several yummy ones, that when put together, make a caramel apple! What about you? For some reason apples taste better in the fall months, although I eat them year round. The same with caramel. Caramel becomes a necessity for me in the fall, and although I try to limit the amount of it that I eat, when fall appears, the apples and caramels seem to jump right into my shopping basket!

Today I took my two favorite fall flavors and tossed in some chocolate, and came up with these Chocolate Apple Crisp Hand Pies! They are bursting with caramel apple flavor and it all comes together in a chocolate crust! I hope you like these!
Apple Crisp Hand Pies 
(makes 6 pies)

1 box store bought refrigerated pie crust rolls
3-5 teaspoons Cocoa Powder 
4-6 teaspoons cold water
3 tablespoons granulated Sugar
Seasoning
1/2 cup granulated Sugar
1 teaspoon Nutmeg
1/4 teaspoon Cinnamon
3 strips of Lemon Zest
4-5 Granny Smith Apples
Crisp Filling
1/3 cup Light Brown Sugar
2 tablespoons Butter
2 tablespoons Flour
2 tablespoons Oatmeal
Caramel Filling/Dough
15-20 Caramel Squares
1-2 tablespoons Heavy Whipping Cream
1-2 teaspoons melted Butter


Unroll the refrigerated dough. Bring it to room temperature.
I started to mix the dough with my hands, but that was not going to work for me. You can do it this way if you want. Just place some of the chocolate on the dough and start kneading it until it becomes all together. I used a food processor, and it was much easier on my hands. As you are incorporating the cocoa powder, add the sugar. You may want to add more sugar than I did.
If you make this the night before it is an easier recipe. Just wrap the dough and set it in the fridge overnight.
When you are ready to pull this all together, start mixing the sugar, nutmeg, cinnamon and lemon zest together in a bowl. You could mix this together the day before also.
Peel and chop the apples. Mix the seasoning with the apples.
Mix together the crisp filling ingredients.
Roll out the chocolate dough. This is not a picture of the dough for this recipe. For this recipe I made the dough 3x4". I rolled the dough to 1/4" thick.
Use a double boiler to melt the caramels.
Once the pie crust pieces are cut, place some of the apples, the crisp filling and the melted caramel on top. Place a small line of melted butter around the edges.
Top with another piece of cut dough.Crimp the edges. The butter will help keep the dough together. Bake at 350 degrees for 10-12 minutes. Remove from oven and let cool. Drizzle with caramel!

Caramel Pecan Cookie Sticks/ #FlavorsofFall

Today I am sharing my Caramel Pecan Cookie Sticks! They are a fun shortbread cookie full of pecan pieces from Millican Pecan Co. and they are topped off with a bit of caramel drizzle! I think they look and taste like fall, and I know they will be a hit in your house!

Caramel Pecan Cookie Sticks 
(makes 1 dozen cookie sticks)

1 cup Butter
3/4 cup Sugar
2 cups Flour
1/2 teaspoon Baking Powder
1/4 teaspoon Salt
1-1 1/2cups Pecan Pieces
15 Caramel Squares

 In a large mixing bowl, beat the butter on medium speed, for 30 seconds. Add the sugar. Mix on medium speed until incorporated. In a separate bowl, stir the flour, baking powder and salt. Add the flour mix to the butter mix. Mix together to form your dough.
Take the pecan pieces and distribute them into the molds of the pan.
 Although this pan has a design on it, it will make no difference in the outcome of these cookies because the pecans are on the bottom. Take approx. 1 tablespoon of dough and push it into the mold of the pan. You might need a little bit more. Cover the pecans like above. 
Bake at 375 degrees for 6-8 minutes.
 As they brown and cook, watch them closely as it doesn't take very long. Remove from oven to cool. Once cool, take them out with any object that won't scratch your pan. I used a plastic fork. It was gentle on the cookie edge, and didn't scratch. Let the cookies cool.
 After the cookies are cooled, melt the caramel. Place the cookies on wax paper. Drizzle the caramel over the cookies.
This is a really easy recipe that highlights the deliciousness of the pecans and adds a bit of sweetness from the caramel. Plus, I think it looks and tastes like fall!

Cranberry Pecan Chicken Wings / #OurFamilyTable

Is there a sweet coolness in the air at your house yet? Not here either! It looks like we have another week of heat, and then some nice autumn weather is dropping by, and I hope it is here for the season! But I decided I am ready for some fall flavors now, so I made these Cranberry Pecan Chicken Wings for today, as we are celebrating Game Day Wings!
These wings are so easy to make, and they taste great right from the oven, or cold from the fridge. I also made a little cranberry dipping sauce to accompany the wings. I hope you enjoy them!

 Cranberry Pecan Chicken Wings
(makes 1 dozen wings)

1 14 ounce can Jellied Cranberry Sauce
12 raw Chicken Wings
2 ounces Sour Cream
2 ounces Cream Cheese, softened
1/4 teaspoon Pumpkin Pie Spice
1 cup chopped pecan pieces

Open can of cranberry sauce. Split the can into 3 large separate bowls placing 7 ounces in 1 bowl, and 3 1/2 ounces each in the other 2 bowls. Use a spatula or spoon to mix the cranberry sauce in each bowl until it is smooth. Set the bowls aside.

Wash the chicken wings, and then place them on a baking sheet. I used parchment paper under the wings, but it is not necessary. It just makes the baking sheet easier to clean. Using a pastry brush, brush each wing with the cranberry sauce. Use the cranberry sauce from one of the 3 1/2 ounce bowls. Make note of which bowl you are using to brush on the sauce to raw meat to avoid cross contamination.
When you are done, do it again. Place wings in oven and bake  at 350 degrees for approximately 40 minutes. Open the oven and brush the wings again, if you would like, while they are baking.
In the bowl with the 7 ounces of cranberry sauce, add the cream cheese and sour cream. Stir in pumpkin pie spice and refrigerate.
Once wings are done, toss wings into the remaining bowl of sauce. Mix. 
Chop the pecans into small pieces.
Roll the chicken wings in the nuts.

Serve with a small dish of the cranberry pumpkin pie spice mix.  Enjoy!

Caramel Apple Quick Bread / #OurFamilyTable

Today I am talking about quick breads! Quick Breads have been a part of my life since I can remember. My mother was not the type of cook with the patience to wait for bread to rise, so quick breads were a staple on our dinner table. I have always loved them, so I was excited to join in this celebration! 
I made a Caramel Apple Quick Bread to celebrate fall! Here in North Carolina we are enjoying a little taste of cooler weather, and although I know it will not last, it is definitely worth celebrating and enjoying it! So Happy Fall!
I used a basic quick bread recipe and then added some additional ingredients to create today's recipe. I hope you love it as much as I do! 
Caramel Apple Quick Bread 
Makes 1 loaf

2 1/4 cup all purpose Flour
1 tablespoon Baking Powder
1/4 teaspoon Salt
1 1/2 cup Buttermilk
3 large Eggs
6 tablespoons Vegetable Oil
3/4 cup of granulated White Sugar
3/4 cup light Brown Sugar
1/2 teaspoon Vanilla

APPLES
2 Gala Apples
1 teaspoon all purpose Flour
1 teaspoon Roasted Cinnamon
1 teaspoon Lemon Juice
1/2 cup Caramel Bits
5 Caramel Squares 


Mix together the flour, baking powder, and salt in a medium bowl. Set aside.
Mix together the eggs, buttermilk, oil, sugars and vanilla.
Add the dry ingredients into the bowl of wet ingredients and mix well.
Grab another bowl and chop up the apples into small pieces, like shown above. Add the flour, roasted cinnamon and lemon juice. Mix together, coating the apples.
Add the bowl of apples into the bread mix. Stir with a spoon or spatula. Add the caramels bits to the bowl and stir.
Grease and flour a loaf pan. Pour bread batter into the pan. Add additional caramel bits. Bake at 350 degrees for 60-80 minutes.
Place 5 pieces of caramel squares across the top of the bread while it is still hot. Drag a knife or rubber spatula around the pan to loosen the sides.

As soon as the bread is taken from the oven, place foil over the bread pan, tented at the top, so the caramels don't get stuck to the foil. Let cool.
 Remove the bread from the pan. 
Enjoy the bread warm or cooled. Be aware that the bread might be wet in some areas because of the apples.

  3. Add the dry ingredients into the bowl of wet ingredients and mix well.
  4. Grab another bowl and chop up the apples into small pieces, like shown above. Add the flour, roasted cinnamon and lemon juice. Mix together, coating the apples.
  5. Add the bowl of apples into the bread mix. Stir with a spoon or spatula. Add the caramels bits to the bowl and stir.
  6. Grease and flour a loaf pan. Pour bread batter into the pan. Add additional caramel bits. Bake at 350 degrees for 60-80 minutes.
  7. Place 5 pieces of caramel squares across the top of the bread while it is still hot. Drag a knife or rubber spatula around the pan to loosen the sides.
  8. As soon as the bread is taken from the oven, place foil over the bread pan, tented at the top, so the caramels don't get stuck to the foil. Let cool.
