Ingredients
  

  • 4 cups water preferably filtered
  • 3 sprigs fresh rosemary whole sprigs
  • 2 cinnamon sticks cinnamon sticks preferably unsweetened
  • 1 orange orange peel stripped using a vegetable peeler
  • 1 lemon lemon peel thin strips

Instructions
 

  • Pour the water into a saucepan and place it on the stove over low heat.
  • Add the sprigs of fresh rosemary and cinnamon sticks to the water, allowing their scents to infuse as the water warms.
  • Use a vegetable peeler to carefully strip the orange and lemon peels, then add them to the saucepan for added citrus aroma.
  • Increase the heat slightly until the water just begins to bubble gently, then reduce to the lowest simmer and cover with a lid.
  • Let the mixture simmer softly for about 30 to 60 minutes, watching to ensure the water doesn’t run dry or boil over, and enjoying the fragrant vapor that rises from the pot.
  • If the scent begins to weaken, add a splash of water and continue simmering for another hour, or until the aroma is rich and inviting.
  • When ready, turn off the heat, remove the herbs and peels if desired, and carefully pour the infused water into another container or reserve for continued simmering.

Notes

Keep an eye on the water level during simmering to prevent burning. Feel free to add other seasonal herbs or a few drops of essential oil for variety. Use a timer to avoid over-torching the spices and herbs.
