- 1 1/2 pounds strawberries quartered
- 4 cups cucumbers chopped
- 1 small red onion chopped
- 8 ounces feta cheese cubed
- 1/2 cup fresh mint minced
- 1/3 cup olive oil
- 1/3 cup golden balsamic vinegar
- 2 Tablespoons lemon juice
- 1/4 teaspoon pepper
Wash and chop the cucumbers, strawberries, and red onion.
Cube the feta cheese and finely mince the fresh mint.
Add all the chopped ingredients to a large mixing bowl.
In a small bowl, whisk together olive oil, golden balsamic vinegar, lemon juice, and black pepper.
Pour the dressing over the salad ingredients.
