- 1 cup roasted pumpkin puree preferably homemade or store-bought
- 1 cup almond milk
- 2 tablespoons honey or maple syrup for sweetness
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1 banana ripe banana adds creaminess and sweetness
- 1/2 cup plain Greek yogurt optional for extra creaminess
Preheat your oven to 400°F (200°C). Slice the pumpkin in half, scoop out the seeds, and place it cut-side down on a baking sheet lined with parchment paper. Roast for about 20 minutes until the flesh is soft and slightly caramelized.
Remove the pumpkin from the oven and let it cool slightly. Scoop out the soft pumpkin flesh and measure out 1 cup of pumpkin puree, placing it into a blender.
Add almond milk, honey or maple syrup, ground cinnamon, nutmeg, and ginger to the blender. Peel the banana and add it to the mixture for extra creaminess and sweetness.
