Ingredients
  

  • 1 cup roasted pumpkin puree preferably homemade or store-bought
  • 1 cup almond milk
  • 2 tablespoons honey or maple syrup for sweetness
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 banana ripe banana adds creaminess and sweetness
  • 1/2 cup plain Greek yogurt optional for extra creaminess

Instructions
 

  • Preheat your oven to 400°F (200°C). Slice the pumpkin in half, scoop out the seeds, and place it cut-side down on a baking sheet lined with parchment paper. Roast for about 20 minutes until the flesh is soft and slightly caramelized.
  • Remove the pumpkin from the oven and let it cool slightly. Scoop out the soft pumpkin flesh and measure out 1 cup of pumpkin puree, placing it into a blender.
  • Add almond milk, honey or maple syrup, ground cinnamon, nutmeg, and ginger to the blender. Peel the banana and add it to the mixture for extra creaminess and sweetness.
  • Include the Greek yogurt if you like a thicker, creamier smoothie. Blend all ingredients on high for 30-60 seconds until smooth and silky, with no lumps remaining.
  • Pour the smoothie into glasses, and if desired, sprinkle a little extra cinnamon on top for added aroma and visual appeal. Serve immediately for a chilled, invigorating fall treat.
