Vegan Crispy "Chicken" Caesar Sandwiches Recipe

Crispy Chickpea "Chicken"
- 15 oz. Can Chickpeas garbanzo beans, drained
- 1 Tbsp. Olive oil
- 1/3 C. Vegetable broth
- 2 Tbsp. Soy sauce
- 1/2 C. Vital wheat gluten
- 1/3 C. Panko bread crumbs
- 1 tsp. Poultry seasoning
- 1/2 tsp. Salt
- Pinch of Black pepper
- 1 C. Bread crumbs for coating the outside
Vegan Caesar Dressing
- 1/4 C. Vegan mayo
- 1 tsp. Dijon mustard
- 1 Tbsp. Capers
- 1 Tbsp. Nutritional yeast
- Juice of 1 Lemon
- 1/4 tsp. Garlic powder
- Pinch of Salt and pepper
Preheat the oven to 400°F. Drain and mash chickpeas in a large mixing bowl until smooth.
Add olive oil, vegetable broth, soy sauce, vital wheat gluten, panko, and seasonings to the chickpeas. Mix well, knead for 2 minutes until firm.
Divide the mixture into 3–4 parts. Shape each into a ball, then flatten into patties.
Coat each patty in breadcrumbs, pressing to ensure even coverage. Place on a greased baking sheet.
Spray patties with non-stick spray and bake for 30 minutes, flipping halfway through. Bake until crispy and golden.
Blend Caesar dressing ingredients until smooth. Set aside.
Assemble sandwiches: spread Caesar dressing on buns, add a chickpea patty, romaine lettuce, and more dressing. Serve and enjoy!
