Equipment

  • A food processor

Ingredients

  • 2 Egg yolks
  • ¾ cup extra virgin Olive oil
  • 4 chopped Anchovies
  • ½ tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 2 cloves Minced Garlic
  • 1 tbsp Fresh Lemon juice
  • ¾ cup Freshly grated Parmesan cheese
  • ¼ tsp Salt
  • ½ tsp Black pepper

Instructions

  • Whisk the egg yolks until creamy. Or, if you're using a food processor, just blend them until creamy.
  • If you're using a food processor, slowly add the olive oil and blend until creamy. Then, add the rest of the ingredients and blend until mixed. If you're whisking, pour the olive oil in slowly while whisking hard until it becomes creamy. Then, add the anchovies, mustard, worcestershire sauce, and lemon juice, and mix well.
  • Whisk in the salt, pepper, and parmesan cheese until everything is mixed.
  • Pour the dressing over romaine lettuce, croutons, and shaved parmesan cheese.

Notes

  • Whisking can be tough, so take your time. If it's too hard, just use a food processor. It'll still turn out great!
