Ingredients
  

For Salad:

  • 5-6 cups Cooked chicken chopped
  • 6 cups chopped Spring Lettuce Mix
  • 1/2 cup chopped Purple cabbage
  • 1/2-1 cup shredded Carrots
  • 1/2 cup Bean sprouts
  • 1/4 cup finely chopped Green onions
  • 1/2 cup sliced Water Chestnuts
  • 16 ounces drained Mandarin oranges
  • 1/2 cup Slivered Almonds
  • 2 packages Snack Ramen noodles (don't use the sauce packet)

Dressing:

  • 2 tbsp Sweet & sour sauce
  • 1 1/2 tsp Soy sauce
  • 3/4 cup seasoned Rice vinegar
  • 2 tsp Sugar
  • 2 1/2 tbsp Sesame oil
  • 1/2 cup Vegetable oil
  • Dash of salt
  • 1/2 tsp Pepper

Instructions
 

  • Put chicken, lettuce, cabbage, carrots, bean sprouts, green onions, water chestnuts, Mandarin oranges, and almonds in a big bowl. Keep it aside.
  • Crush the Ramen noodles and add them to the salad just before you serve it.

Sweet & Sour Chicken Salad Dressing:

  • Mix all dressing ingredients in a shaker bottle or blender until smooth.

Notes

  • To add more carbs and fibre, mix in cooked rice or quinoa.
  • For extra crunch and flavour, add chopped peanuts or cashews.
  • If you like it spicy, sprinkle in some red pepper flakes.
