For Salad:
- 5-6 cups Cooked chicken chopped
- 6 cups chopped Spring Lettuce Mix
- 1/2 cup chopped Purple cabbage
- 1/2-1 cup shredded Carrots
- 1/2 cup Bean sprouts
- 1/4 cup finely chopped Green onions
- 1/2 cup sliced Water Chestnuts
- 16 ounces drained Mandarin oranges
- 1/2 cup Slivered Almonds
- 2 packages Snack Ramen noodles (don't use the sauce packet)
Dressing:
- 2 tbsp Sweet & sour sauce
- 1 1/2 tsp Soy sauce
- 3/4 cup seasoned Rice vinegar
- 2 tsp Sugar
- 2 1/2 tbsp Sesame oil
- 1/2 cup Vegetable oil
- Dash of salt
- 1/2 tsp Pepper
Put chicken, lettuce, cabbage, carrots, bean sprouts, green onions, water chestnuts, Mandarin oranges, and almonds in a big bowl. Keep it aside.
Crush the Ramen noodles and add them to the salad just before you serve it.
Sweet & Sour Chicken Salad Dressing:
- To add more carbs and fibre, mix in cooked rice or quinoa.
- For extra crunch and flavour, add chopped peanuts or cashews.
- If you like it spicy, sprinkle in some red pepper flakes.
