Protein Pancakes Recipe

These Protein Pancakes are great for breakfast, especially if you're in a hurry! You can make them ahead of time and just toast them when you're ready to eat. They're packed with protein, around 13 grams per serving, depending on your protein powder. Made with just six ingredients, like protein powder and Greek yogurt, they're quick and yummy!

Equipment

  • Mixing bowl
  • Whisk or electric mixer
  • Spatula
  • Non-stick skillet or griddle

Ingredients
  

  • 2 Big eggs
  • ½ cup Sour cream or full-fat Greek yogurt
  • 2 Servings of your favorite protein powder
  • 1 tsp Baking powder
  • Some cooking spray butter, or coconut oil for the pan

Instructions
 

  • Heat up a non-stick pan on medium heat and grease it with cooking spray, butter, or coconut oil.
  • Mix the eggs, protein powder, and baking powder in a big bowl.
  • Stir in the sour cream or Greek yogurt until everything's mixed up.
  • Use a ¼ cup to pour the batter onto the pan. You can fit about 3 pancakes at once. Flip them when you see bubbles on top and the edges are set.
  • Serve them with butter, sugar-free syrup, and whatever toppings you like, such as chocolate chips or blueberries.

Notes

  • Instead of water or almond milk, we use sour cream or Greek yoghurt to keep the pancakes moist.
  • If you only want one serving, you can easily cut the recipe in half.
  • No egg whites? No worries! Just use whole eggs instead. Around 3 to 4 eggs will replace 1/2 cup of egg whites. Easy fix!
