- 1 Egg
- 1/2 cup Milk any kind
- 1/4 cup Vegetable oil
- 1 tsp Vanilla extract
- 1/2 cup Sugar
- 1 1/2 cups All-purpose flour
- 2 tsp Baking powder
- 1/2 tsp Salt
Preheat your oven to 400°F. Line your muffin pan with paper liners or grease it well.
Mix the beaten egg, milk, vegetable oil, and vanilla in a bowl.
In another bowl, mix the baking powder, flour, sugar, and salt.
Pour the wet mixture into the dry ingredients and mix until just combined.
Spoon the batter into each muffin cup until they're about 2/3 full.
Bake for 16-20 minutes until they're golden brown.
Store leftovers in a bag or container to keep them fresh.
- Mix wet and dry ingredients separately to avoid over-mixing.
- Test your baking powder to make sure it's still good.
- Rotate the muffin pan halfway through baking for even cooking.
- Let the muffins cool on a rack after baking.
