Ingredients
  

  • 2 large red bell peppers
  • 2 large yellow bell peppers
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • 1 French baguette sliced
  • 4 ounces goat cheese
  • Fresh basil leaves for garnish

Instructions
 

  • Preheat the oven to 425°F (220°C). Line a baking sheet with aluminum foil or parchment paper.
  • Place the whole bell peppers on the prepared baking sheet and drizzle them with olive oil. Roast in the preheated oven for 20-25 minutes, or until the peppers are charred and softened, turning occasionally.
  • Remove the peppers from the oven and transfer them to a bowl. Cover the bowl with plastic wrap and let the peppers cool for 10-15 minutes.
  • Once cooled, peel the skins off the peppers, remove the seeds and stems, and slice them into thin strips.
  • In a small bowl, mix together the minced garlic, balsamic vinegar, salt, and pepper.
  • Brush the sliced baguette with olive oil and toast them in the oven or on a grill until golden brown and crisp.
  • To assemble, spread a layer of goat cheese onto each toasted baguette slice. Top with the roasted pepper strips and drizzle with the balsamic garlic mixture.
