Ingredients
  

  • 2 cups cooked chicken
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 2 cloves garlic minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • Cooking oil

Instructions
 

  • In a large mixing bowl, combine the shredded chicken, shredded cheddar cheese, grated Parmesan cheese, chopped parsley, chopped green onions, minced garlic, paprika, dried oregano, salt, and black pepper. Mix until well combined.
  • In a separate small bowl, whisk the eggs. Pour the beaten eggs over the chicken mixture and stir until everything is evenly coated.
  • Sprinkle the flour over the mixture and stir again until all ingredients are fully incorporated and the mixture holds together.
  • Heat cooking oil in a large skillet or frying pan over medium heat.
  • While the oil is heating, shape the chicken mixture into small patties or fritters, using about 2-3 tablespoons of the mixture for each fritter.
  • Carefully place the fritters in the hot oil, making sure not to overcrowd the pan. Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy.
  • Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.
