Ingredients
  

  • 20 large button mushrooms
  • 1/2 pound 225g Italian sausage
  • 1/2 cup 60g breadcrumbs
  • 1/4 cup 25g grated Parmesan cheese
  • 2 cloves garlic
  • 2 tablespoons 30ml olive oil
  • 2 tablespoons 30ml chopped fresh parsley
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.
  • In a skillet or frying pan, heat olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon or spatula, and cook until browned and cooked through, about 5-7 minutes. Drain any excess fat from the skillet.
  • In a mixing bowl, combine the cooked sausage, breadcrumbs, grated Parmesan cheese, minced garlic, chopped fresh parsley, salt, and pepper. Mix until well combined.
  • Take each mushroom cap and fill it generously with the sausage mixture, pressing down slightly to pack the filling.
  • Place the stuffed mushrooms on the prepared baking sheet, spacing them apart.
  • Optional: Sprinkle additional grated Parmesan cheese over the stuffed mushrooms for extra flavor.
  • Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the filling is golden brown and crispy on top.
  • Once cooked, remove the stuffed mushrooms from the oven and let them cool slightly before serving.
  • Garnish with additional chopped parsley, if desired, and serve warm.
