Ingredients
  

  • 1 pound 450g cooked shrimp, peeled, deveined, and chopped
  • 2 ripe avocados diced
  • 1 cup 150g cherry tomatoes, halved
  • 1/4 cup 40g red onion, finely chopped
  • 1/4 cup 15g fresh cilantro, chopped
  • 1 jalapeño pepper
  • Juice of 2 limes
  • 1 tablespoon 15ml olive oil
  • Salt and pepper to taste

Instructions
 

  • If using raw shrimp, cook them by boiling in salted water for 2-3 minutes until pink and opaque. Drain and let cool. If using precooked shrimp, simply thaw if frozen and chop into bite-sized pieces.
  • Dice the ripe avocados and halve the cherry tomatoes. Finely chop the red onion, fresh cilantro, and jalapeño pepper (if using). Place all the prepared ingredients in a mixing bowl.
  • Add the chopped shrimp to the mixing bowl with the diced avocados, halved cherry tomatoes, chopped red onion, cilantro, and jalapeño (if using).
  • Squeeze the juice of two limes over the ingredients in the bowl. Drizzle with olive oil. Season with salt and pepper to taste.
  • Use a spoon or spatula to gently toss all the ingredients together until well combined. Be careful not to mash the avocado too much; you want to keep some texture.
  • For best flavor, cover the bowl with plastic wrap and refrigerate the salsa for about 30 minutes to allow the flavors to meld. However, you can also serve it immediately if desired.
  • Once chilled (if preferred) or immediately, transfer the Avocado Shrimp Salsa to a serving bowl or platter. Garnish with additional cilantro leaves or lime wedges if desired.
