Ingredients
  

  • 8 slices of bread whole wheat, white, or your preferred variety
  • 2 cups sliced mushrooms such as cremini, button, or portobello
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste
  • 1 cup shredded cheese such as cheddar, Swiss, or mozzarella
  • 1/4 cup finely chopped onion
  • 1 clove garlic minced
  • 1 tablespoon chopped fresh herbs

Instructions
 

  • Heat olive oil or butter in a skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes, or until they are tender and golden brown. Season with salt and pepper to taste. If using, add chopped onion and minced garlic and cook until softened and fragrant.
  • While the mushrooms are cooking, preheat your toaster or toaster oven. Place the slices of bread in the toaster and toast until golden brown and crispy.
  • Once the mushrooms are cooked and the bread is toasted, it's time to assemble the sandwiches. Divide the sautéed mushrooms evenly among four slices of toasted bread.
  • Sprinkle shredded cheese over the mushrooms on each slice of bread. If desired, add chopped fresh herbs for extra flavor.
  • Top each sandwich with the remaining four slices of toasted bread to form sandwiches.
  • Return the assembled sandwiches to the skillet over medium heat. Cook for 2-3 minutes on each side, or until the cheese is melted and the bread is golden brown and crispy.
  • Once the sandwiches are heated through and the cheese is melted, remove them from the skillet and serve immediately.
