Ingredients
  

  • 2 medium-sized eggplants diced into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1 tablespoon ginger minced
  • 2 green chilies sliced (adjust according to preference)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder adjust according to spice tolerance
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions
 

  • Heat vegetable oil in a large skillet or frying pan over medium heat.
  • Add cumin seeds to the hot oil and let them sizzle for a few seconds until fragrant.
  • Add finely chopped onion to the pan and sauté until it turns translucent, about 2-3 minutes.
  • Stir in minced garlic, minced ginger, and sliced green chilies, and sauté for another 1-2 minutes until aromatic.
  • Add diced eggplant to the pan, along with turmeric powder, coriander powder, and red chili powder. Mix well to coat the eggplant with the spices.
  • Season with salt to taste and continue cooking, stirring occasionally, until the eggplant is tender and cooked through, about 15-20 minutes.
  • Once the eggplant is cooked, remove the pan from heat and garnish with fresh cilantro leaves, if desired.
