Ingredients
  

  • 3 medium-sized Carrots grated (about 2 cups)
  • 2 medium-sized Apples cored and diced
  • 1/4 cup Raisins
  • 2 tbsp Lemon juice
  • 2 tbsp Honey
  • 2 tbsp Olive oil
  • Salt according to taste
  • Black pepper according to taste
  • 1/4 cup Chopped nuts optional, such as walnuts or pecans

Instructions
 

  • Wash, peel, and grate the carrots.
  • Core and dice the apples.
  • Mix the grated carrots, diced apples, and raisins in a large bowl.
  • In a small bowl, whisk together lemon juice, honey, olive oil, salt, and pepper.
  • Pour the dressing over the carrot, apple, and raisin mixture.
  • Gently toss everything together until well combined.
  • Optionally, cover and refrigerate for about 30 minutes to let the flavors blend.
  • Give it a final toss and serve chilled.

Notes

  • Feel free to add your favorite nuts.
  • Use mayonnaise instead of the suggested dressing if you prefer.
  • Add fresh herbs like mint, basil, or coriander for extra flavor.
  • Choose any type of apple, whether red or green.
