Ingredients
  

  • 3 medium-sized Beets
  • 1/2 cup Mayonnaise
  • 2 tbsp Greek yogurt
  • 1 tbsp Lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Chopped fresh herbs such as parsley or dill for garnish (optional)..

Instructions
 

  • Wash, peel, and cook the beets until they're soft.
  • Let the cooked beets cool down, then chop them up.
  • Mix together mayonnaise, Greek yogurt, lemon juice, mustard, salt, and pepper to make the dressing.
  • Pour the dressing over the chopped beets and mix gently.
  • Put the salad in the fridge for about an hour to chill.
  • Serve the salad cold, and if you like, sprinkle some fresh herbs on top. Enjoy!

  • Choose small or medium beets for sweeter flavor.
  • If you're short on time, cook the beets in the microwave.
