Ingredients
  

For Salad:

  • 2 cooked Chicken breasts shredded or diced
  • 1 head Iceberg lettuce chopped
  • 1 cup shredded Carrots
  • 1 cup shredded Red cabbage
  • 1/2 cup sliced Almonds
  • 1/4 cup chopped Green onions
  • 1/4 cup chopped Cilantro optional
  • 1/4 cup crispy Chowmein noodles optional

For the Dressing:

  • 1/4 cup Soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp Sesame oil
  • 1 tbsp Honey
  • 1 tsp Grated Ginger
  • 1 clove Garlic minced

Instructions
 

  • Cook the chicken and cut it into small pieces.
  • Cut the lettuce, carrots, cabbage, onions, and cilantro.
  • Toast the almonds in a pan until they turn golden.
  • Mix the cooked chicken, chopped veggies, and toasted almonds in a big bowl.
  • In a small bowl, mix soy sauce, vinegar, sesame oil, honey, ginger, and garlic to make the dressing.
  • Pour the dressing over the salad and mix it well.
  • Add crispy noodles on top if you like.
  • Serve and enjoy your tasty Chinese chicken salad!

Notes

  • If you have extra cooked chicken or bought rotisserie chicken, you can use it to make things easier.
  • You can add more veggies like bell peppers, snow peas, or bean sprouts if you want more taste and crunch.
  • Change the dressing ingredients as you like. For example, add more honey if you want it sweeter or more soy sauce if you want it saltier.
  • Keep any extra dressing in a separate container from the salad. This stops the salad from getting too wet.
