Ingredients
  

  • 1 Small head Cabbage thinly sliced or shredded.
  • 1/2 cup Dried Cranberries.
  • 1/4 cup Sliced Almonds. Optional
  • 2-3 Green Onions Scallions, thinly sliced. optional

Dressing:

  • 2 tbsp Olive Oil. Optional
  • 1 tbsp Apple Cider Vinegar. Optional
  • 1 tbsp Honey or Maple Syrup. Optional

Instructions
 

  • Slice or shred cabbage into thin strips.
  • Put cabbage in a large bowl.
  • Add dried cranberries to the bowl.
  • Optionally, add sliced almonds or green onions.
  • Gently mix everything together.
  • Optionally, prepare dressing by mixing olive oil, apple cider vinegar, and honey or maple syrup in a small bowl.
  • Pour dressing over the salad.
  • Mix salad again to coat everything with dressing.
  • Serve and enjoy!

Notes

  • You can change the ingredients to match your taste. Add more or less of anything you prefer.
  • If you want a sweeter salad, you can put in a little extra honey or maple syrup in the dressing.
  • To make the salad more filling, you can include grilled chicken or tofu for protein.
  • You can make the salad ahead of time and keep it in the fridge for a few hours before serving. Just add the dressing just before serving to keep the cabbage crunchy.
