Ingredients
  

  • 3 medium-sized Beets peeled and shredded
  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1 tbsp Honey or maple syrup
  • Salt and pepper to taste
  • Crumbled feta cheese Optional toppings
  • Chopped nuts, fresh herbs Optional toppings

Instructions
 

  • Peel and shred the beets.
  • Put the shredded beets in a bowl.
  • Mix olive oil, lemon juice, honey or maple syrup, salt, and pepper to make the dressing.
  • Pour the dressing over the shredded beets and mix well.
  • Let it sit for a bit.
