Instructions
 

  • Place the dry spices—cinnamon, nutmeg, cloves, allspice, and ginger—in a small skillet or dry frying pan.
  • Gently toast the spices over medium-low heat, shaking the pan frequently to prevent burning. Toast until fragrant, about 1-2 minutes, listening for a sizzling, aromatic sound.
  • Remove the spices from heat and let them cool slightly; this helps to deepen their aroma.
  • Transfer the toasted spices into a mortar and pestle or spice grinder, and grind them until finely blended, about 30 seconds.
  • Pour the ground spice mixture into a clean glass jar or airtight container. Store in a cool, dark place, and use as needed to enhance your autumn dishes.

Notes

Adjust quantities for a milder or more intense flavor. You can also add dried orange peel for a citrusy twist or a pinch of cardamom for additional complexity.
