- 6 large flour tortillas
- 2 cans 15 ounces each refried beans
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup salsa
- 1/2 cup cooked white or brown rice
- 1/4 cup finely chopped yellow onion
- 2 tablespoons chopped fresh cilantro
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
For Serving
- Sour cream
- Guacamole
- Pico de gallo
- Sliced jalapeƱos
- Fresh cilantro
Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook for 2 to 3 minutes until softened.
Stir in the refried beans, salsa, chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper. Cook for 4 to 5 minutes, stirring occasionally, until the beans are hot and well seasoned.
Warm the tortillas in a dry skillet or microwave until soft and flexible. Place a generous spoonful of the seasoned beans down the center of each tortilla.
Add a little cooked rice, followed by the shredded cheddar and Monterey Jack cheese. Sprinkle with fresh cilantro.
