- 4 chicken legs thighs and drumsticks attached
- 1 teaspoon kosher salt
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic granules or garlic powder
- 2 teaspoons ground black pepper divided
- 2 teaspoons dried parsley divided
- 4 large onions thinly sliced
- 3 cloves garlic minced
- 3 tablespoons Dijon mustard
- 1 lemon juiced
- 2 tablespoons olive oil
- 1 1/2 cups chicken stock
- 2 bay leaves
- 1/4 cup green olives
In a bowl, season chicken with salt, cayenne, garlic powder, black pepper, and half the parsley.
In a skillet, sear the chicken until golden; set aside.
Sauté onions and garlic in olive oil until soft and fragrant.
Stir in Dijon mustard and lemon juice; mix well.
Return chicken to the pan, pour in chicken stock, add bay leaves and olives.
Cover and simmer for 35–40 minutes, until chicken is tender.
Sprinkle remaining parsley, adjust seasoning if needed.
Serve warm with rice or your favorite side.
