Ingredients
  

  • 4 chicken legs thighs and drumsticks attached
  • 1 teaspoon kosher salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic granules or garlic powder
  • 2 teaspoons ground black pepper divided
  • 2 teaspoons dried parsley divided
  • 4 large onions thinly sliced
  • 3 cloves garlic minced
  • 3 tablespoons Dijon mustard
  • 1 lemon juiced
  • 2 tablespoons olive oil
  • 1 1/2 cups chicken stock
  • 2 bay leaves
  • 1/4 cup green olives

Instructions
 

  • In a bowl, season chicken with salt, cayenne, garlic powder, black pepper, and half the parsley.
  • In a skillet, sear the chicken until golden; set aside.
  • Sauté onions and garlic in olive oil until soft and fragrant.
  • Stir in Dijon mustard and lemon juice; mix well.
  • Return chicken to the pan, pour in chicken stock, add bay leaves and olives.
  • Cover and simmer for 35–40 minutes, until chicken is tender.
  • Sprinkle remaining parsley, adjust seasoning if needed.
  • Serve warm with rice or your favorite side.
