Ingredients
  

  • cups semi-sweet chocolate chips
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • cups heavy whipping cream divided
  • 2 tablespoons powdered sugar
  • ¼ teaspoon salt
  • 2 tablespoons cocoa powder

Instructions
 

  • Place the chocolate chips and butter in a microwave-safe bowl. Heat in short intervals, stirring between each, until smooth.
  • Stir in the vanilla extract and allow the chocolate mixture to cool slightly.
  • In a chilled bowl, whip 1 cup of heavy cream until soft peaks form.
  • Gently fold the whipped cream into the cooled chocolate mixture until smooth and airy.
  • In a separate bowl, whip the remaining heavy cream with the powdered sugar until stiff peaks form.
  • Fold half of the sweetened whipped cream into the chocolate mixture to create a light mousse.
  • Spoon or pipe the mousse into serving cups.
  • Refrigerate for at least 4 hours, or until fully set.
  • Top with the remaining whipped cream just before serving.
  • Dust with cocoa powder or chocolate shavings and enjoy chilled.
