Ingredients
  

  • 1 tsp Baking soda
  • 1 cup Coconut flakes
  • 2 cups All-purpose flour
  • 2 tsp Vanilla extract
  • 1 cup Butter, softened
  • 1 Egg
  • 2/3 cup White sugar
  • 2/3 cup Lightly packed brown sugar

Instructions
 

  • Toast coconut flakes and pecans in a skillet over medium-low heat until lightly browned, about 3 minutes.
  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream together butter, brown sugar, and white sugar until light and fluffy using an electric mixer.
  • Add egg and vanilla extract, and mix until combined.
  • Combine flour and baking soda, then add to the butter mixture and mix until just combined.
  • Stir in toasted pecans and coconut.
  • Scoop 1 1/2-tablespoon portions of dough onto the prepared baking sheet.
  • Bake for 10-12 minutes until lightly browned.
  • Cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
