Preheat your oven to 350°F (175°C).
Line a large baking sheet (about 12" x 18") with parchment paper.

Arrange saltine crackers in a single layer on the prepared baking sheet. Set aside.
In a medium saucepan over medium heat, melt butter and sugar together, stirring constantly until the mixture is fully melted and begins to bubble.
Remove the saucepan from the heat, and stir in the vanilla extract until well combined.
Pour the butter-sugar mixture evenly over the saltines on the baking sheet, using a spatula to spread it out and ensure all crackers are coated.
Bake in the preheated oven for 15-20 minutes, or until the sugar mixture caramelizes and turns golden brown.
Remove the baking sheet from the oven and immediately sprinkle chocolate chips evenly over the hot crackers.
Let them sit for 1-2 minutes to soften.
Using an offset spatula or the back of a spoon, gently spread the melted chocolate over the crackers until they are evenly coated.
Allow the crackers to cool at room temperature, then transfer the baking sheet to the refrigerator for about an hour to let the chocolate set completely.
