Ingredients
  

For the Chicken:

  • 1 ½-2 lbs boneless skinless chicken breasts or thighs
  • 3 cloves garlic minced (or 2 tsp pre-minced)
  • 1 inch fresh ginger peeled and minced (or 1 tsp ground ginger)
  • cup low-sodium soy sauce
  • ¼–⅓ cup brown sugar adjust for desired sweetness
  • 2 tbsp honey
  • 1 tbsp rice vinegar or distilled white vinegar
  • 2 tsp toasted sesame oil

Optional for Thickened Sauce:

  • 2 tbsp cornstarch
  • 2 tbsp cold water

Garnish:

  • 1 tbsp sesame seeds
  • 2 tbsp sliced green onions

Instructions
 

  • Prepare the Sauce: In a small bowl, whisk together garlic, ginger, soy sauce, brown sugar, honey, rice vinegar, and sesame oil until smooth.

  • Assemble in Crockpot: Place chicken in the slow cooker and pour the sauce over it. Make sure the chicken is fully coated.

  • Cook: Cover and cook on High for 4 hours or Low for 5–6 hours, until the chicken is tender and cooked through.
  • Shred Chicken: Remove chicken from the crockpot and shred using two forks. Return the shredded chicken to the crockpot.

  • Optional Thickening: In a small bowl, mix cornstarch and cold water to make a slurry. Stir into the sauce in the slow cooker and cook an additional 5 minutes, until sauce thickens.
  • Serve: Spoon chicken and sauce over rice, noodles, or in a sandwich. Garnish with sesame seeds and green onions.

Notes

  • Chicken Choice: Boneless thighs stay juicier than breasts, but both work.
  • Adjust Sweetness: Increase or decrease honey and brown sugar to taste.
  • Make Ahead: Slow cook in advance and refrigerate; reheat gently in the crockpot or microwave.
