For the Chicken:

- ¼–⅓ cup brown sugar adjust for desired sweetness
- 2 tbsp honey
- 1 tbsp rice vinegar or distilled white vinegar
- 2 tsp toasted sesame oil
Optional for Thickened Sauce:
- 2 tbsp cornstarch
- 2 tbsp cold water
Garnish:
- 1 tbsp sesame seeds
- 2 tbsp sliced green onions
Prepare the Sauce: In a small bowl, whisk together garlic, ginger, soy sauce, brown sugar, honey, rice vinegar, and sesame oil until smooth.
Assemble in Crockpot: Place chicken in the slow cooker and pour the sauce over it. Make sure the chicken is fully coated.
Cook: Cover and cook on High for 4 hours or Low for 5–6 hours, until the chicken is tender and cooked through.
Shred Chicken: Remove chicken from the crockpot and shred using two forks. Return the shredded chicken to the crockpot.
Optional Thickening: In a small bowl, mix cornstarch and cold water to make a slurry. Stir into the sauce in the slow cooker and cook an additional 5 minutes, until sauce thickens.
