Ingredients
  

  • 6 Mini Cucumbers or 1 long English cucumber
  • ½ cup Red onion thinly sliced or diced
  • 2 tbsp Olive oil
  • 1 tbsp Red wine vinegar
  • 1 tbsp Fresh Lemon juice
  • 1 tbsp Fresh dill
  • 1 tbsp Fresh parsley
  • ¼ tsp Salt adjust to taste
  • tsp Black pepper
  • 2 Ounces crumbled Feta cheese

Instructions
 

  • Mix olive oil, vinegar, lemon juice, dill, parsley, salt, and pepper in a bowl.
  • Slice the cucumbers about ¼ inch thick. If you're using an English cucumber, cut it into quarters.
  • Add cucumbers and sliced onion to the bowl and mix them with the dressing. Chill in the fridge for at least 30 minutes or up to 4 hours.
  • Before serving, sprinkle feta cheese on top and add extra herbs if you want.

Notes

  • Fresh herbs taste best in this salad.
  • You can add minced garlic for more flavor.
  • This salad stays good in the fridge for up to 4 days, so you can make it ahead of time.
