Fresh Roasted Turkey Sandwiches on Semi Homemade Rolls

Roasted Turkey
- 1 turkey breast
- 2 carrots
- 1 stalk celery
- ¼ onion
- Butter cut into 4 pieces
- Pepper to taste
Semi-Homemade Rolls
- 1 loaf roll dough
- Sandwiches
- Romaine lettuce as needed
- Onion as needed
- Roma tomato as needed
- ½ avocado
- Mayonnaise as needed
Roughly chop the carrots, onion, and celery.
Place the turkey breast in a roasting pan with a roasting rack underneath and add the vegetables to the pan.
Place the butter, cut into 4 pieces, and pepper over the turkey.
Roast at 325°F for 2½–3 hours, drizzling the melted butter over the turkey with a spoon or baster during roasting.
About 1 hour into roasting, turn the turkey breast over if desired. Insert a thermometer and cook until the turkey reaches 170°F. Remove from the oven and let rest for about 15 minutes, then cut the turkey from the bone.
Cut 1 loaf of roll dough into 8 pieces. Place the pieces on a cookie sheet. and let them rise in a warm spot.
Bake the rolls at 350°F for 9 minutes, then let them cool.
Build the sandwiches with the roasted turkey, romaine lettuce, onion, Roma tomato, and ½ avocado. Add a small dab of mayonnaise to the warm homemade buns and serve.
