Taco Chicken Filling:
- 1 lb ground chicken
- 1 1-oz package taco seasoning or 3 tbsp homemade taco seasoning
- 1 10-oz can diced tomatoes and green chiles, undrained

- ½ tsp black pepper
- 1 tsp garlic powder
- ½ tsp onion powder

- 12 flour tortillas taco or fajita size, cut into squares or 12 frozen phyllo tart shells
- 1½ cups shredded cheddar cheese or Mexican cheese blend
- ½ cup ranch dressing
- Cooking spray or melted butter for brushing

Prep Tortilla Cups: Preheat oven to 400°F (200°C). Cut tortillas into squares and press into muffin tins to form cups. Spray lightly with cooking spray or brush with melted butter. Bake 8–10 minutes until slightly crisp. If using frozen phyllo tart shells, skip this step.
Cook Chicken: Heat a skillet over medium heat. Add ground chicken, season with salt, pepper, garlic powder, and onion powder. Cook until no longer pink, breaking it up with a spatula.
Add Taco Flavor: Stir in taco seasoning and diced tomatoes with green chiles. Simmer 3–5 minutes until slightly thickened. Remove from heat.
Combine with Cheese and Ranch: In a mixing bowl, combine cooked chicken mixture with shredded cheese and ranch dressing. Stir until evenly mixed.
