- 5 tablespoons butter divided
- 1 small onion chopped
- 1 stalk celery chopped
- 3 cups chicken base/broth
- 8 cups broccoli florets chopped into small bite-size pieces
- 3 tablespoons all-purpose flour
- 2 cups milk
- Black pepper to taste
- 2 cups shredded cheddar cheese
Chop the onion and celery into bite-size pieces.
Cut the broccoli into small florets, removing the excess stalk.
Melt 2 tablespoons of butter in a large pot over medium heat. Add the onion and celery and sauté until tender.
Prepare the 3 cups of chicken base/broth according to the package directions. Make sure that 3 teaspoons of chicken base is mixed with 3 cups of boiling water. Add the prepared broth to the pot.
Add the chopped broccoli, cover the pot, and cook for 10 minutes, until the broccoli is tender.
In a small saucepan, melt the remaining 3 tablespoons of butter. Stir in the flour then gradually add the milk, stirring until the mixture becomes thick and bubbly.
Pour the thickened milk mixture into the soup and stir well to combine. Season with black pepper to taste.
Add the shredded cheddar cheese and stir until melted.
The heat from the soup will melt the cheese and create a creamy, gooey texture.
Top with extra cheese if desired, serve hot and enjoy as a spooky Halloween dinner or buffet soup.
