These Halloween Eyeball Jello Shots are made with strawberry gelatin, vodka, and gummy eyeballs for a simple Halloween party treat. The gelatin sets in small cups, then each shot gets an edible eyeball on top just before serving.

- 1 6-ounce box strawberry Jell-O
- 1 cup boiling water
- 1 cup cold water
- 1 cup vodka
- 24 gummy eyeball candies
Arrange the plastic shot cups on a baking sheet so they are easy to move to the refrigerator. A small baking sheet or tray also helps prevent the cups from tipping while you fill them.
Add the strawberry Jell-O to a large mixing bowl. Pour in the boiling water and stir until the gelatin is completely dissolved.
Stir in the cold water, followed by the vodka. Mix until everything is evenly combined. Add the alcohol after dissolving the gelatin rather than boiling it with the mixture.
Carefully pour the mixture into the shot cups, filling each one nearly to the top. A small funnel makes this step much easier and keeps the sides of the cups clean.
Transfer the tray to the refrigerator and chill for at least 1 hour, or until the jello shots are firmly set. For the best texture, they can be chilled overnight.
Place one gummy eyeball on top of each set jello shot just before serving.
