- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon granulated sugar
- 3/4 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup unsalted butter frozen and grated
- 1 cup shredded sharp cheddar cheese
- 3/4 cup diced cooked ham
- 2 tablespoons chopped fresh chives
- 2/3 cup heavy cream
- 1 large egg
- 1 teaspoon Dijon mustard optional
- 1 tablespoon heavy cream for brushing
- 1 tablespoon shredded cheddar for topping (optional)
- Flaky sea salt for garnish (optional)
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, sugar, salt, garlic powder, and black pepper. Add the grated butter and work it into the flour until the mixture resembles coarse crumbs.
Stir in the shredded cheddar cheese, diced ham, and chopped chives until evenly distributed.
Whisk together the heavy cream, egg, and Dijon mustard if using. Pour the wet ingredients into the flour mixture and gently stir until a shaggy dough forms. Avoid overmixing.
Transfer the dough to a lightly floured surface and gently press it into a 1-inch thick circle. Cut into 8 equal wedges and place them on the prepared baking sheet, leaving space between each scone.
Brush the tops with heavy cream and sprinkle with extra cheddar cheese and flaky sea salt if desired.
Bake until the scones are golden brown and cooked through. Let them cool for 5 to 10 minutes before serving warm.
