- 2 tablespoons canola oil
- 2 garlic cloves peeled
- 2 15 ounce cans pinto beans
- 1 teaspoon cumin
- 1 teaspoon chili powder
- salt to taste
- ½ lime juiced
Heat canola oil in a skillet over medium heat.
Add whole garlic cloves and sauté until lightly golden.
Add pinto beans (with some liquid), cumin, chili powder, and salt.
Simmer for 5–7 minutes, stirring occasionally.
Remove garlic or mash it into the beans (your choice).
Mash beans with a potato masher until smooth or leave slightly chunky.
Stir in lime juice and adjust seasoning to taste.
Serve warm as a side or filling.
