  • Add the sifted flour, sugar, and baking powder directly into a microwave-safe mug. Stir well to combine, creating a dry mixture with a slightly grainy texture.
  • Pour in the fresh lemon juice and vegetable oil, then use a fork or small whisk to stir everything together until a smooth, slightly thick batter forms. You should see a bright yellow hue and a fragrant citrus aroma emerging.
  • If using lemon zest, sprinkle it over the top of the batter now for an extra burst of flavor. Gently fold it in with a toothpick or skewer if you'd like.
  • Place the mug in the microwave and cook on high for about 60 seconds. Keep an ear out for bubbling or sizzling sounds as the cake rises;
    it should look puffed up and feel springy to the touch once done. The surface may crack slightly, indicating it's perfectly cooked.
  • Carefully remove the mug from the microwave using a pot holder or cloth. Let it sit for a minute; the residual heat will finish setting the cake.
