- 4 boneless skinless chicken breasts
- 2 tablespoons minced garlic or garlic paste
- Kosher salt
- Black pepper
- 1 tablespoon dried oregano divided
- 2 tablespoons extra virgin olive oil
- 1/2 cup dry white wine
- 1 large lemon juiced
- 1/2 cup chicken broth
- 1 medium red onion finely chopped
- 4 small tomatoes diced, about 1 1/2 cups
- 1/4 cup sliced green olives
- Handful of fresh parsley stems removed, leaves chopped
- Crumbled feta cheese optional
Season chicken breasts with salt, pepper, and half the oregano.
Heat olive oil in a skillet over medium heat and sear chicken until golden, about 3-4 minutes per side. Remove and set aside.
In the same pan, sauté garlic and chopped red onion until fragrant and soft.
Add diced tomatoes, green olives, remaining oregano, and cook for 5 minutes.
Pour in white wine, lemon juice, and chicken broth; simmer for 3 minutes to reduce slightly.
Return chicken to the pan, cover, and cook for 10 minutes until chicken is fully cooked.
Sprinkle chopped parsley and crumbled feta cheese on top before serving.
