- 8 ounces cremini or button mushrooms sliced
- 2 cups fresh spinach
- 1 cup cherry tomatoes halved
- 1 small yellow onion thinly sliced
- 2 cloves garlic minced
- 4 large eggs
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
Heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and onion, then cook until the mushrooms release their moisture and begin to brown.
Add the garlic and cook for about 30 seconds until fragrant. Stir in the spinach and cook until it starts to wilt.
Add the cherry tomatoes, smoked paprika, oregano, salt, and black pepper. Cook for another 2 to 3 minutes until the vegetables are tender and well combined.
